Time 15m

Number Of Ingredients 7

1 c uncooked acini de pepe or orzo pasta
1 can(s) 29 ounces, sliced peaches
1 3/4 c cold milk
1 pkg instant vanilla pudding (small)
1/4 c sugar
3 c miniature marshmallows
2 c whipped topping

Steps:

  • 1. Cook pasta according to package directions; drain and rinse in cold water. Drain peaches, reserving 1/4 cup syrup; set peaches aside.
  • 2. In large bowl, whisk the milk, pudding mix, sugar and reserved syrup for two minutes. Let stand for two minutes or until soft set. Stir in peaches and pasta. Fold in marshmallows and whipped topping. Cover and refrigerate until serving. ENJOY!

Tips:

  • Choose ripe peaches. The riper the peaches, the sweeter and more flavorful your pudding will be.
  • Use fresh lemon juice. Fresh lemon juice adds a bright, citrusy flavor to the pudding. If you don't have fresh lemon juice, you can substitute bottled lemon juice, but be sure to use half the amount.
  • Don't overcook the pudding. The pudding is done when it has thickened and coats the back of a spoon. If you overcook it, it will become tough and rubbery.
  • Serve the pudding warm or cold. Creamy peach pudding is delicious served warm or cold. If you're serving it cold, be sure to chill it for at least 2 hours before serving.

Conclusion:

Creamy peach pudding is a classic summer dessert that is easy to make and always a crowd-pleaser. With its creamy texture, sweet peach flavor, and hint of lemon, it's the perfect way to end a meal or enjoy a sweet treat. So next time you have some ripe peaches, be sure to give this recipe a try!
