8 ounces dry fettuccine pasta
2 tablespoons olive oil
1 medium yellow onion, chopped
3 cloves garlic, crushed
1 lemon, juiced
1 (3.75 ounce) can sardines in tomato sauce
1 pinch red pepper flakes, or to taste
¼ cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for about 8 minutes, or until almost tender.
  • While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the onion, and cook for a few minutes until soft, then add the garlic, and cook until fragrant. Stir in the sardines with their sauce. When the sardines heat through, reduce heat to low, and simmer until the pasta is ready.
  • When the pasta is almost done, drain, and add it to the sardine sauce. Stir, cover, and turn the heat off. Let stand for a few minutes to absorb the flavors of the sauce. Squeeze juice from the lemon over the pasta. Divide onto serving plates, and top with red pepper flakes and grated Parmesan cheese.

1 lb penne rigate
1 teaspoon flour
1 (4 ounce) can sardines in oil, drained (King Oscar's double layer)
1 teaspoon garlic, minced
1 cup low sodium chicken broth
1/2 teaspoon fresh ground black pepper
2 tablespoons lemon juice
2 ounces unsalted butter or 2 ounces unsalted margarine
1 cup jarlsberg cheese, coarsely grated
1/2 cup cream
1/4 cup dill, finely chopped
1 medium Spanish onion, sliced

Steps:

  • Cook pasta in a large pan of boiling water as directed on package directions, 10-12 minutes or until al dente. Drain well.
  • Melt butter in same pan. Gently cook onion and garlic, until translucent, about 5 minutes.
  • Use on low heat to avoid browning. Blend in flour and cook, stirring for 1 minute.

8 cloves garlic, chopped
1 1/2 cups bread crumbs
1/2 cups flat-leaf parsley, chopped

2 tins sardines, 4 ounces each, drained, boned and chopped
1 teaspoon crushed red pepper flakes
1 pound linguini, fresh or dried, your choice, cooked to al dente in salted water

Steps:

  • To a large skillet preheated over medium heat, add 1/4 cup extra-virgin olive oil, 4 turns of the pan, and chopped garlic. When the garlic speaks by sizzling in oil add bread crumbs. Stir bread crumbs until deeply golden in color. Add parsley and a liberal amount of salt and pepper, about 1 teaspoon of each. Transfer bread crumbs to a dish and reserve.
  • Return skillet to heat and add 3 tablespoons extra-virgin olive oil, 3 turns of the pan. Add sardines and red pepper flakes to the pan and saute over medium heat 2 or 3 minutes. Add hot, cooked pasta to the skillet and toss with sardines. Add bread crumbs to the pot and toss thoroughly to combine and evenly distribute the mixture. Taste, to adjust seasonings, and serve.

¾ cup olive oil, divided
6 cloves garlic, minced
2 (4 ounce) cans sardines packed in olive oil, drained
1 cup seasoned bread crumbs

400g spaghetti
1 tbsp olive oil
2 garlic cloves , crushed
pinch chilli flakes
227g can chopped tomato
x cans skinless and boneless sardines in tomato sauce
100g pitted black olives , roughly chopped
1 tbsp capers , drained
small handful parsley , chopped

Steps:

  • Cook the spaghetti in a large pan of boiling salted water according to pack instructions. Meanwhile, make the sauce. Heat the oil in a medium pan and cook the garlic for 1 min. Add the chilli flakes, tomatoes and sardines, breaking up roughly with a wooden spoon. Heat for 2-3 mins, then stir in the olives, capers and most of the parsley. Mix well to combine.
  • Drain the pasta, reserving a couple of tbsp of the water. Add the pasta to the sauce and mix well, adding the reserved water if the sauce is a little thick. Divide between 4 bowls and sprinkle with the remaining parsley.

For this recipe you can use sardines fillets, but you can also use whole fish. Sometimes, when I'm too lazy, I use the whole fish for this recipe and serve it that way. Every guest can take as many as he wants. And it is a lot of fun. Brings back memories of Italia, sitting in one of those little fish restaurants and enjoying fresh fish. For this recipe you should always use fresh fish. Serve it with some bread and a glass of a dry white white wine.

1 lb sardines (fillets or head, gut and scales removed)
1/2 lb penne
1 tablespoon olive oil
1 tablespoon fresh thyme leave
2 ounces feta cheese
1/2 cup cream
1 tablespoon tomato puree
1 tablespoon butter
salt and pepper, to tase

Steps:

  • Preheat oven (390 F, 200 C).
  • Cook Penne according to package directions, but only until hardly al dente.
  • Meanwhile put 1 tablespoon of olive oil in an oven proof dish.
  • Salt and pepper sardines to taste and arrange them in a single layer in the dish.
  • Combine cream, tomato puree and thyme leaves. Salt and pepper to taste.
  • When pasta are cooked drain them (but do not rinse them) and arrange them over the fish.
  • Spread the cream-tomato mixture evenly over pasta. Sprinkle with 1 tablespoon of olive oil.
  • Crumble feta cheese over the sauce. Place butter in little pieces on top and put in the oven.
  • Bake for 25 minutes. Serve hot.
  • NOTE: if you like it a bit more saucy use 3/4 cup of cream and 2 tablespoons of tomato puree.

1/4 cup drained capers, patted dry
2 cups coarse fresh bread crumbs (from a baguette)
1/2 cup chopped dill
2 to 3 (3 3/4-ounces) cans sardines in olive oil
4 garlic cloves

Steps:

  • Cook spaghetti in a pasta pot of well- salted boiling water until al dente.
  • Meanwhile, heat oil in a 12-inch heavy skillet over medium heat until it shimmers. Fry capers until they "bloom" and are just a shade darker, about 2 minutes. Transfer with a slotted spoon to paper towels to drain. Toast bread crumbs in same skillet, stirring, until golden, about 3 minutes. Transfer to a bowl and toss with capers, dill, and 1/4 teaspoon each of salt and pepper.
  • Add sardines to skillet with their oil (if using 3 cans sardines, discard oil from 1 can) over medium-high heat, then force garlic through a garlic press into skillet. Sauté until sardines are golden in spots around edges, about 2 minutes.
  • Reserve 1 cup pasta-cooking water, then drain pasta. Add pasta to skillet with cooking water and 1/2 teaspoon each of salt and pepper. Toss until pasta is coated and sauce is slightly thickened, 1 to 2 minutes. Serve topped with seasoned crumbs.

  • To save time, use canned sardines. Just be sure to drain them well and remove any bones.
  • If you don't have fresh dill, you can use dried dill. Just use about 1/4 of the amount called for in the recipe.
