2 Tablespoons canola oil
1 cup diced onion
1 garlic clove, minced
1/2 cup thinly-sliced carrots
1/2 cup thinly-sliced celery stalks
28 oz can fire-roasted tomatoes
1 chipotle pepper in 1 teaspoon adobo sauce
4 cups chicken or vegetable stock
2 Tablespoons tomato paste
1 cup Lifeway Greek-style Kefir

  • Heat oil over medium heat in a medium-size stockpot. Add onion and a pinch of salt, stirring and cooking until the onions are translucent. (About 5 minutes.) Add the carrots and celery, and cook for 3 more minutes. Then add the garlic and cook 2 more minutes. Add the tomatoes and bring to a boil. Add the chipotle pepper in adobo sauce, stock, and tomato paste and bring back to a boil. Cover partially, and simmer on medium-low heat, stirring occasionally, for 20 minutes. Remove from heat and cool for 5 minutes. Use an immersion blender to puree until smooth. (If you don't have an immersion blender, carefully transfer to a blender or food processor and blend until smooth.) Whisk in the Kefir until fully incorporated, serve warm.

Tips:

- Fresh tomatoes: Use fresh tomatoes for the best flavor. If fresh tomatoes are not available, you can use canned tomatoes. - Roasted tomatoes: Roasting the tomatoes before making the soup gives them a deeper, richer flavor. - Cream: Use heavy cream or half-and-half for a richer soup. You can also use milk, but the soup will be thinner. - Herbs: Add fresh herbs, such as basil, oregano, or thyme, for extra flavor. - Seasonings: Season the soup to taste with salt, pepper, and garlic powder. - Garnish: Garnish the soup with fresh basil, croutons, or grated Parmesan cheese.
