1/4 cup low-fat (1 percent) cottage cheese
3 tablespoons fresh lemon juice
1 teaspoon olive oil

1 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Cut tomatoes into quarters; puree in a food processor. Pass through a strainer into a bowl; discard seeds and skin.

2 tablespoons red wine vinegar

Salt and pepper
Assorted large and small heirloom tomatoes, sliced or quartered
Creamy Chive Dressing, recipe follows
Point Reyes blue cheese, crumbled
Whole chives, for garnish
3 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 heaping tablespoon prepared mayonnaise
1/4 cup chopped fresh chives
Salt and freshly ground black pepper
1/2 cup canola oil

Steps:
