RICE MEATBALLS
"I first made these meatballs when our children were small, and they just loved them," notes Mary Kelso of Hannibal, Missouri. "I occasionally use cream of mushroom soup instead of tomato soup, and that variation is delicious, too."

Tips:
- Use ripe tomatoes. This will give your sauce a richer flavor and a more vibrant color.
- Don't overcrowd the pan. When browning the meatballs, do it in batches so that they have plenty of room to brown evenly.
- Simmer the sauce for at least 30 minutes. This will allow the flavors to meld and develop.
- Use a good quality rice. Long grain rice is a good choice for this recipe.
- Don't overcook the rice. Rice should be cooked through but still have a slight bite to it.
