2 tablespoons butter
6 green onions, thinly sliced
3 tablespoons chopped fresh garlic

1 large red onion, finely chopped
3 tablespoons butter
3 tablespoons olive oil

2 teaspoons creole seasoning
12 ounces uncooked penne pasta

1 lb cooked fettuccine
3 tablespoons olive oil
1 lb peeled deveined raw large shrimp
1 lb chicken thigh, cut into bite sized oieces
7 teaspoons creole seasoning
1 lb andouille sausage
1/2 cup diced green pepper
1/2 cup diced yellow onion
1 tablespoon minced garlic
1/2 cup chicken stock
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 cup heavy cream
1/2 cup grated parmesan cheese

Steps:

  • Heat 1 TBS of olive oil over medium high heat in a large saute pan. Season the shrimp with 2 teaspoons of the Creole seasoning. Place the shrimp in the pan and saute until almost done. Remove the shrimp from the pan and set aside.
  • Add 1 tablespoon olive oil to the pan. Season the Chicken pieces with 2 teaspoons of the Creole seasoning. Place the Chicken in the pan and saute until done. Remove the Chicken from the pan and set aside.
  • Place the remaining TBS of olive oil in the saute pan and onions and bell peppers. Saute, stirring occasionally, until the onions are translucent, about 3 minutes. Add the sausage and cook another minute.
  • Add the garlic to the pan and saute for 30 seconds.
  • Add the chicken stock to the pan and scrape pan to remove any browned bits that have formed in the bottom, about 30 seconds.
  • Add the thyme, 3 teaspoons of creole seasoning and 1/2 tsp salt and cook for 2 minutes.
  • Add the heavy cream to the pan and cook an additional 2 minutes.
  • Return the shrimp and chicken to the pan. Add the cooked pasta to the pan. Continue to cook the sauce and pasta, stirring occasionally, for about 3-5 minutes. Remove from the heat and add the basil and Parmesan.

7 tablespoons butter
1 tablespoon Worcestershire sauce
hot pepper sauce, to taste
jalapeno pepper sauce, to taste
½ lemon, juiced
½ teaspoon fines herbs
1 bay leaf
½ teaspoon dried thyme
3 tablespoons vegetable oil
1 ¼ pounds large shrimp - peeled and deveined
2 tablespoons chopped fresh parsley

Steps:

  • Cook pasta in a large pot of boiling water until done. Drain.
  • Meanwhile, melt butter in a small saucepan over very low heat. Add Worcestershire sauce, and hot sauces to taste; mix well. Stir in lemon juice, herb mix, bay leaf, and thyme. Keep warm, but do not simmer.

1 Tablespoon butter
1/3 cup diced Green Bell Pepper
1/3 cup diced Red Onion
1/3 cup diced Celery
1/3 lb medium Cremini or White Mushrooms - sliced.
¼ cup chopped Italian Parsley (reserve 1 tablespoon)
4 cloves Garlic- chopped fine
20 oz (3 cups) prepared Red Tomato Salsa
½ teaspoon ground black pepper
1 lb uncooked, dried linguine (whole wheat or high protein can be substituted)
1 cup heavy cream

  • In large Dutch oven, heat 6 quarts of salted water to boil. Add pasta and cook until al dente as directed. Drain and reserve. Heat Olive Oil in 12 inch skillet on Medium heat. Add Bell Pepper, Onion and Celery - sauté for 2 minutes, stirring frequently Add Mushrooms - continue sauté until well moistened and lightly browned- approx 3 minutes. Add butter, stirring to melt. 2 cups of chicken stock or water
2 teaspoons Old Bay spice
1 teaspoon thyme or mixed Italian herbs

Several cranks black pepper
1 1/2 tablespoons olive oil
2 to 3 tablespoons butter
1/2 cup onion, finely chopped
3 cloves garlic, chopped
1 small fresh red or jalapeno chili, minced (optional)
2 tablespoons Worcestershire sauce
1/4 cup tablespoons of lemon juice
1/4 cup white wine
1/3 cup chopped parsley
8 oz. of fettuccine or linguine pasta

  • 1. Take half the shrimp shells and combine with the stock and let simmer at least 10 minutes or until you finish the recipe. 2. Strain and set aside. Boil the pasta according to package directions in highly salted water. Drain without rinsing, and set aside. 3. Combine the Old Bay, thyme, cayenne, a few cranks of black pepper and shrimp in a bowl, then toss to coat. 4. Heat the oil in a heavy large skillet over high heat until a sprinkle of water dances on the surface. Add the shrimp and cook until just pink, about two minutes.
