2 small English cucumbers, thinly sliced
2 medium carrots, thinly sliced
1 large sweet red pepper, julienned
1/2 medium red onion, thinly sliced
2 green onions, sliced
1/2 serrano or jalapeno pepper, seeded and thinly sliced, optional
MARINADE:
1/3 cup sugar
1/3 cup rice vinegar
1/3 cup water
1 teaspoon each salt, garlic powder and pepper
1 teaspoon sesame oil
1 teaspoon reduced-sodium soy sauce
1 small garlic clove, minced
1/2 teaspoon minced fresh gingerroot
1/4 teaspoon cayenne pepper, optional
Optional toppings: minced fresh cilantro, chopped peanuts and additional sliced green onion

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, mix marinade ingredients, stirring to dissolve sugar. Pour over vegetables; toss to combine. Refrigerate, covered, 30 minutes or overnight., Serve with a slotted spoon. Top as desired.

2 large carrots, shredded
1 large yellow bell pepper, seeded and cut into strips
1 large red bell pepper, seeded and cut into strips

2 tablespoons rice vinegar
1 teaspoon coarse salt
1/2 teaspoon sugar
1 small red onion, peeled and cut into thin rounds
1 cup red radish, thinly sliced
1 -3 tablespoon fresh dill, chopped
salt and pepper
2/3 cup white wine vinegar
3 tablespoons sugar
2 cloves garlic, finely chopped
1 tablespoon water
3 tablespoons olive oil

Steps:

  • Put cucumber, sliced onion, radishes and dill together and toss gently.
  • In a small bowl, whisk together the ingredients for the dressing.

1 English cucumber
1 carrot
1 cup radish, thinly sliced
1/3 cup white onion, thinly sliced
3 tablespoons vegetable oil
4 teaspoons rice wine vinegar
1 teaspoon brown sugar, packed

1 teaspoon sesame oil
1/4 teaspoon hot pepper sauce
