1 ¼ pounds ground turkey
2 eggs, divided
1 ¼ cups whole wheat bread crumbs, divided
3 scallions, finely chopped
3 tablespoons finely chopped parsley
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 dashes hot sauce
¼ cup all-purpose flour, or as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a baking sheet with cooking spray.
  • Combine turkey, 1 egg, 1/4 cup bread crumbs, scallions, parsley, garlic powder, salt, and black pepper in a bowl. Form mixture into 6 patties using a 1/3-cup measuring cup.
  • Beat remaining egg and hot sauce together in a bowl. Pour remaining bread crumbs into a bowl. Pour flour into a separate bowl.
  • Coat patties with flour, egg mixture, and bread crumbs, in that order, and place on the prepared baking sheet. Lightly spray patties with cooking spray.
  • Bake in the preheated oven until crisp, 18 to 20 minutes.

4 Turkey Patties or 1 lb. ground turkey, formed in to 4 patties (plain or choice of flavored)
salt (to taste)
pepper (to taste)
4 slices cheese (I used "brick cheese")
4 brioche or hamburger buns
4 slices tomato
4 lettuce leaves
4 slices bacon
4 tbsp fiesta mayo (recipe in post, or choice of sauce)

Steps:

  • Begin by preheating your oven to 375 degrees.
  • Line a baking dish (big enough to fit 4 turkey patties without touching) with olive oil
  • Season both sides of turkey patties with salt and pepper if you wish, and place them in baking dish. Bake for 30 minutes.
  • White turkey patties are baking, fry your turkey bacon in a skillet. See above for tips for frying bacon!
  • This is also a good time to mix up your fiesta mayo (or other condiment/sauce you wish to make).
  • When turkey burgers have reached 30 minutes, the internal temperature of each burger should be 165 degrees, before consuming.
  • If turkey burgers are to 165, place one slice of cheese on each burger and place back in the oven for seconds (or a few minutes) to allow the cheese to melt.
  • Remove burgers from oven and build turkey club by stacking on a brioche bun, bacon, lettuce, tomato and fiesta mayo! Enjoy!

1 tablespoon olive oil
3/4 cup onion (finely chopped)
2 cloves garlic (finely minced)
1 pound ground turkey thighs
1 pound ground turkey breast
1/3 cup dry breadcrumbs (unseasoned)
3 tablespoons fresh cilantro (chopped)
2 tablespoons lemon juice (or lime juice)
1 large egg (lightly beaten)
1 teaspoon Creole seasoning (or a seasoned salt mixture)
1/2 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
8 hamburger buns (toasted, if desired)
For Serving: lettuce, tomato, salsa , flavored mayonnaise, barbecue sauce

Steps:

  • Gather the ingredients.

Yes, there is a turkey burger that my red meat eating boys will eat! After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.
  • Form into patties of desired size and thickness. If you keep them fairly thick, they will be moister.
