GARLIC GINGER CHICKEN

Flavor packed Chinese takeout style chicken recipe made with fresh ginger and garlic in a soy sesame caramelized sauce.

Provided by Amanda Cooks & Styles

Categories     Main Course

Time 45m

Number Of Ingredients 14

1 lb. Chicken Thighs (boneless, skinless - cut into small chunks)
1 Egg
3 tbsp Cornstarch
3/4 cup Water
1 tbsp Fresh Ginger (very finely chopped)
1 tbsp Fresh Garlic (very finely chopped)
1 tbsp Yellow/White Onion (very finely chopped )
3 tbsp Soy Sauce
3 tbsp Brown Sugar
1 tbsp White Wine Vinegar
1 tsp Sesame Oil
2 tbsp Canola Oil
Green Onions
Sesame Seeds

Steps:

  • In a small bowl, mix wine vinegar, sesame oil, ginger, garlic, onion, brown sugar, soy sauce, and water.
  • Heat your skillet to medium heat and pour in the sauce. Bring sauce to a light simmer and let simmer for about 10 minutes until sauce darkens. Then, carefully pour sauce back into the bowl and set aside for later.
  • In a large mixing bowl, add chicken and cornstarch and toss until chicken is fully coated. You may need to add an additional tablespoon or two of cornstarch.
  • In a small bowl, whisk egg. Pour egg over the chicken and gently mix chicken to coat.
  • In the same skillet you cooked the sauce in, add oil and heat to medium-high heat. Once hot, carefully add chicken to the skillet. Gently spread chicken out into an even layer and let cook until bottom is golden. Don't panic, the chicken will look weird at this point but it will all come together.
  • Once the bottom of the chicken is golden, flip chicken over, gently breaking pieces apart. Cook for another 5-7 minutes on the other side until golden. Then, turn heat to low and let cook for another 10 minutes, stirring occasionally.
  • Drain excess oil from pan (if any) and turn heat up to high. Pour sauce over the chicken and begin stirring frequently for a few minutes.
  • Serve with a sprinkle with fresh chopped green onions and sesame seeds (optional). Enjoy!

GARLIC-GINGER CHICKEN WINGS

Garlic-Ginger Chicken Wings image

My mom lives in a small town in western New York, called Clifton Springs. Whenever I go home to visit, I usually indulge in some Buffalo chicken wings from a place called Emerson's. They have two flavors of wings; Buffalo-style, and sweet and sour. I came up with what turned out to be a deliciously sticky, ginger and garlic glaze. I really hope you give these a try.

Time 1h15m

Yield 10

Number Of Ingredients 12

cooking spray
5 pounds chicken wings, separated at joints, tips discarded
salt and ground black pepper to taste
3 tablespoons hot sauce (such as Frank's Red Hot ®)
2 tablespoons vegetable oil
1 cup all-purpose flour
3 crushed garlic cloves
2 tablespoons minced fresh ginger root
1 tablespoon Asian chile pepper sauce
½ cup rice vinegar
½ cup packed brown sugar
1 tablespoon soy sauce

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with aluminum foil; grease the foil with cooking spray.
  • Place the chicken in a large mixing bowl. Season with salt, pepper, and hot sauce. Add the vegetable oil; toss to coat.
  • Place the flour and wings in a large, food-safe plastic bag. Hold the bag closed tightly, and shake to coat the wings entirely with the flour; no wet spots should remain. Arrange the wings on the prepared baking sheets, making sure none of the pieces are touching one another. Spray wings with additional cooking spray
  • Bake in the preheated oven for 30 minutes, turn all the wings, and return to the oven to cook until crispy and no longer pink in the center, about 30 minutes more.
  • Whisk together the garlic, ginger, chili paste, rice vinegar, brown sugar, and soy sauce in a saucepan. Bring the mixture to a boil and immediately remove from heat.
  • Put about half the wings in a large mixing bowl. Pour about half the sauce over the wings. Toss the wings with tongs to coat evenly; transfer to a tray and allow to sit about 5 minutes to allow the sauce to soak into the wings before serving. Repeat with remaining wings and sauce.

CREAMY GARLIC GINGER CHICKEN

Creamy Garlic Ginger Chicken image

Chicken breast in a complex, savory creamy sauce served over noodles (or rice). No salt needed; other ingredients add plenty of flavor!

Provided by Bonnie Traynor

Categories     One Dish Meal

Time 25m

Yield 4 serving(s)

Number Of Ingredients 13

3 chicken breast halves, large boneless and skinless, cubed
1 small onion, chopped
2 tablespoons coconut oil
2 tablespoons lemon juice
2 teaspoons garlic powder (or more to taste)
1 1/2 teaspoons bouillon, chicken (Better Than Bouillon)
2 teaspoons ginger paste
1 tablespoon flour
1/4 cup parmesan cheese, grated
1 tablespoon butter
1/4 cup half-and-half (or whipping cream)
1 dash cayenne pepper (to taste)
4 ounces yolk-free egg noodles

Steps:

  • Melt coconut oil in large saute pan.
  • Saute chopped onion in coconut oil, adding garlic powder and lemon juice to the saute.
  • When onions are softened, add the cubed chicken, and saute chicken until cooked almost through. Do not drain.
  • Add bouillon, ginger paste, grated Parmesan, and flour, stirring thoroughly until flour is evenly combined.
  • Add half and half, stir until combined.
  • Put the noodles on in boiling water per package directions; they cook for 10-12 minutes.
  • Lower heat on chicken mixture to medium-low, let it cook down while the noodles are boiling.
  • With 1 minute left on noodles, add 1 tbsp of butter to the chicken mixture to finish the sauce. Stir gently.
  • Drain noodles, serve the chicken and sauce mixture over the noodles and enjoy!

Tips:

  • Use fresh ginger and garlic: Fresh ginger and garlic provide the best flavor for this dish. If you don't have fresh, you can use ground ginger and garlic powder, but the flavor will be less intense.
  • Marinate the chicken: Marinating the chicken in the ginger-garlic mixture for at least 30 minutes helps to infuse it with flavor. You can marinate the chicken for up to 24 hours for even more flavor.
  • Use a light coating of cornstarch: Coating the chicken in cornstarch helps to create a crispy crust. Be sure to shake off any excess cornstarch before frying the chicken.
  • Fry the chicken in hot oil: Frying the chicken in hot oil helps to create a crispy crust and cook the chicken through quickly. Be careful not to overcrowd the pan, or the chicken will not cook evenly.
  • Serve immediately: Crispy garlic ginger chicken is best served immediately after frying. Garnish with green onions and sesame seeds for extra flavor.

Conclusion:

Crispy garlic ginger chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is marinated in a flavorful mixture of ginger, garlic, soy sauce, and rice vinegar, then coated in cornstarch and fried until crispy. The result is a juicy, tender chicken with a crispy crust and a delicious garlic-ginger flavor. Serve with your favorite sides, such as steamed rice, stir-fried vegetables, or a simple salad.
