CRISPY HERB BAKED CHICKEN

Crispy Herb Baked Chicken image

I found this recipe on a box of Idaho Spuds Mashed Potato flakes and tried it tonight. Absolutely delicious and as simple as can be. Just a few simple ingredients and voila, chicken fit for a king! I used a 350 degree oven instead of 375 because I fixed some roasted red potatoes at the same time. They both turned out deliciously well.

Tips:

  • Choose quality chicken: Use air-chilled or organic chicken for the best flavor and texture.
  • Pat the chicken dry: This helps the skin crisp up.
  • Season generously: Use a combination of salt, pepper, and your favorite herbs and spices.
  • Don't overcrowd the pan: Give the chicken pieces plenty of space so they can cook evenly.
  • Roast at a high temperature: This will help the skin get crispy and the meat cook through quickly.
  • Let the chicken rest before carving: This allows the juices to redistribute throughout the meat, making it more tender and flavorful.
