PF CHANGS CRISPY HONEY CHICKEN (COPYCAT)
This recipe is all over the web, and it is usually touted as the PF Chang's recipe. I don't know if it the same, as the waiter told me the chicken was lightly breaded in potato flour. So I might try it that way too. Also, I have not tried this yet, but I am OBSESSED with their lunch bowl of Crispy Honey Chicken, so I had to go searching for a recipe! Serve over brown rice, white rice or crispy noodles! We like brown rice best!!! Cook time is my best guess!

Steps:
- To make batter: mix ingredients till just combined. Let rest in refrigerator for a couple of hours. Coat chicken well with seasonings and marinate in the refrigerator for 20 minutes. Combine sauce ingredients, mix thoroughly and reserve for serving.
- Pour vegetable oil into fryer or heavy bottomed sauce pot. Heat slowly to 340-350 degrees. Put 1/4 of the marinated chicken in a clean bowl and pour enough better over to coat. Remove a few pieces at a time from the batter, using slotted spoon or large fork. Shake off excess batter. Carefully lower chicken into the hot oil. Suspend the chicken until the batter "sets," 20-30 seconds. Chicken is done when golden to light brown and crisp. Remove to platter with paper towels to drain. Repeat for all the chicken. Remember to check the oil temperature, it must remain hot.
- To finish the sauce, heat it in sauce pan, bring to a boil. Mix cornstarch and water to make a slurry. Add cornstarch slurry, a little at a time. The sauce will thicken, let it come to a thickness of "loose honey." Let cook for a minute or two.
- Heat 2 more tablespoons of oil in a wok and add some minced garlic, red bell pepper and scallions and stir-fry briefly. Add 1/3 to 1/2 of the chicken (depending on pan size) and stir-fry briefly. Add enough sauce to just coat chicken. Stir-fry again briefly. Serve over noodles or rice.

Steps:
- For the chicken: Place a heavy-bottomed Dutch oven over medium-high heat. Add your frying oil and heat to 375 degrees F.
- In a large bowl or a gallon-sized resealable plastic bag, mix together the cornstarch, baking powder, salt and your favorite seasonings. Add your chicken pieces to the flour mixture. Coat the chicken well, but be sure to shake off any excess flour. At this point the chicken can be battered immediately, or it can sit, refrigerated, for 2 hours or overnight, coated in the dry dredge.
- In a separate large bowl, whisk together all of the dry batter ingredients, then add all of the wet ingredients, stirring to smooth out any lumps.
- Dredge the cornstarch-coated cutlets in the batter, letting any excess drip off and lay them in the oil. Add a few pieces at a time so the temperature of the oil doesn't drop, and fry until golden brown on both sides, 3 to 5 minutes. Remove to a paper towel-lined tray.
- For the spicy honey: Whisk together the honey and Sriracha or chiles in a bowl. If using chiles, allow the heat to infuse for at least 30 minutes.
- To serve, drizzle the chicken with your Spicy Honey and serve with any extra Spicy Honey on the side.

CRISPY SKILLET-FRIED CHICKEN WITH A SPICY HONEY DRIZZLE
Number Of Ingredients 13
Steps:
- First, marinate the chicken: Place the chicken pieces on a baking sheet. Season on both sides with salt and black pepper. Pour the buttermilk into a large mixing bowl. Add the chicken, cover the bowl, and marinate in the refrigerator for 2 to 3 hours, turning occasionally.
- Before frying, pour enough peanut oil to reach a depth of 1-inch in a heavy large skillet, preferably cast-iron. Heat the oil to 350 to 365 degrees on a deep-frying thermometer.
- In a large sealable plastic bag, combine the flour, rice flour, white pepper, cayenne, paprika, garlic powder and celery salt. Close the bag and shake to blend. Remove 2 pieces of chicken from the buttermilk, place them in the bag, close the bag, and shake to coat them evenly. Transfer to a baking sheet. Repeat with the remaining pieces.
- Carefully add the chicken, skin side down, to the hot oil in the skillet. Fry until deep brown and cooked through, 5 to 8 minutes per side depending on size, adjusting the heat to maintain the frying temperature; add the rosemary sprig to the oil, if you like. (A chicken piece will be cooked through if, after removing it from the oil, it registers 165 degrees on an instant-read thermometer inserted into the thickest part of the meat not touching bone.) Using tongs, transfer the cooked chicken to a rack.
- Arrange the cooked chicken pieces on a napkin-lined platter. Place the lemon wedges around the chicken. In a small saucepan over low heat, warm the honey. Stir in the extra cayenne to taste. Drizzle the honey over the chicken. Serve immediately.

Steps:
- Preheat oven to 350F (180C). For easy clean-up, line a roasting pan or a rimmed baking sheet with aluminum foil and spray with cooking spray. Place chicken, skin-side up, on prepared pan. Season with salt and pepper on all sides. In a small bowl, whisk together honey, garlic, rice vinegar, and soy sauce. Add water to thin, as necessary. Spoon about half of the sauce over chicken and spread liberally on each piece. Set aside remaining sauce. Bake, uncovered, for about 50 minutes - 1 hour, or until chicken is cooked through and skin is crispy and golden brown. As the chicken cooks, baste it once or twice with the remaining sauce. Recipe Notes Cooking Just for Two? You can easily cut the recipe in half. The grocery store often sells bone-in, skin-on chicken thighs or drumsticks in packages that range from 1.5 - 2 lbs. That's the perfect amount of chicken to cook for two people, and then just cut the sauce ingredients in half as well. Cooking time and temperature will remain the same. HEALTHIER CRISPY CHICKEN FINGERS WITH HONEY MUSTARD SAUCE
Steps:
- Preheat oven to 400o F. Combine the chicken and the buttermilk in a shallow dish. Cover and chill for 15 minutes. Pulverize cereal in a food processor. You could put the cereal in a plastic bag and crush with a rolling pin, it just won't be as fine or evenly crushed. Spray a baking tray with cooking spray. Season the chicken well with salt and pepper. Dip each piece of chicken in the cereal to fully coat and arrange on the baking tray. Bake until cooked through, about 10 minutes. Leave the chicken on the baking tray to cool slightly, it will get crispier. While chicken is baking make the honey-mustard sauce by combining mustard and mayonnaise until smooth. Stir in honey.
CRISPY HONEY SRIRACHA CHICKEN WINGS
The honey-sriracha glaze is quite delicious and incredibly simple, but merely an afterthought here. The real star of the show is the strange, but effective, technique of coating the wings with a baking powder-laced spice rub before baking. Through the magic of chemical reactions, the surface of the chicken becomes bone-dry, and eventually crisps up to something very similar to what would come out of a deep fryer.

Tips:
- To make the chicken extra crispy, double coat it in the cornstarch mixture.
- Be sure to use a large pot or wok to fry the chicken in, so that it doesn't overcrowd.
- Don't overcrowd the pan when frying the chicken, or it will not cook evenly.
- Fry the chicken in batches, if necessary, to avoid overcrowding the pan.
- Use a meat thermometer to ensure that the chicken is cooked through to an internal temperature of 165°F (74°C).
- To make the honey sauce, use a light-colored honey, such as clover honey, so that the color of the sauce is not too dark.
- If the honey sauce is too thick, you can thin it out with a little water or chicken broth.
- Serve the crispy honey chicken with steamed rice, noodles, or vegetables.
Conclusion:
Crispy honey chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal or a party. The chicken is crispy on the outside and tender on the inside, and the honey sauce is sweet and tangy. This dish is sure to please everyone at the table.
