Provided by judy2304

Time 2h15m

Yield 12

Number Of Ingredients 10

cooking spray
5 medium potatoes, peeled and cubed
1 ½ pounds breakfast sausage
6 ounces chorizo sausage
1 ½ large green bell peppers, chopped
1 large onion, chopped
2 (4 ounce) cans sliced mushrooms, drained
20 large eggs
½ cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 11x13-inch baking dish with cooking spray.
  • Place cubed potatoes in a large microwave-safe bowl and partially cover with a lid. Microwave on high for 4 minutes. Remove from the microwave and spread on the bottom of the prepared baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir breakfast and chorizo sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add bell peppers, onion, and mushrooms. Saute until bell peppers and onion are softened, about 5 minutes. Spread mixture over the potatoes.
  • Beat eggs in a bowl and add milk. Pour beaten eggs over everything in the baking dish and move around a bit with a spoon to evenly disperse. Sprinkle Cheddar cheese over top until well covered. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake until egg is set, about 1 more hour. If cheese starts to brown too much, cover again with foil for the rest of the baking time.

Time 1h25m

Yield One 10-inch skillet pie

Number Of Ingredients 13

Nonstick cooking spray
16 ounces frozen hash browns, thawed
1 tablespoon unsalted butter, melted
1/3 cup finely grated Parmesan
1/2 teaspoon freshly ground black pepper
4 cooked sausage links, sliced 1/4-inch thick
1 bunch scallions, thinly sliced
1 cup shredded Cheddar
3 large eggs
1/2 cup half-and-half, whole milk or heavy cream
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Hot sauce, to taste, optional

Steps:

  • For the crust: Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with nonstick spray.
  • Spread the hash browns over a layer of paper towels to air-dry for 10 to 15 minutes (alternatively, you can press them vigorously between layers of paper towels 2 to 3 times).
  • In a medium bowl, stir the dried hash browns, melted butter, Parmesan and pepper together. Press the mixture into the base and evenly up the sides of the prepared skillet. Transfer to the oven and bake until the potatoes begin to become golden brown and crisp, about 15 minutes.
  • Meanwhile, for the filling: Toss the sausage, scallions and 3/4 cup of the Cheddar in a medium bowl to combine.
  • In another medium bowl, whisk together the eggs, half-and-half, salt, pepper and hot sauce, if using.
  • Carefully press the sausage mixture into the browned crust. Pour the egg mixture over the sausage and sprinkle with the remaining 1/4 cup Cheddar. Carefully transfer the skillet to the oven. Bake until the crust is deeply browned and very crisp and the filling appears set when you gently shake the skillet, 35 to 40 minutes. Cool at least 10 minutes before slicing and serving. Serve warm or at room temperature.

EGG, POTATO, AND SAUSAGE SKILLET RECIPE

Egg, Potato, and Sausage Skillet Recipe image

All of my favorite breakfast foods- eggs, hashbrowns, and sausage - cooked up in one easy skillet meal. This also makes a delicious dinner!

Provided by Six Sisters

Number Of Ingredients 11

1 (16 ounce) package turkey sausage (or your favorite kind of sausage)
1/2 yellow onion (diced)
1 (28 ounce) bag frozen potatoes O'Brien (with onions and peppers in it)
1/4 green pepper (diced)
1/4 red pepper (diced)
1/2 cup broccoli (finely chopped)
8 eggs (lightly beaten)
1/2 cup skim milk (or almond milk works great in this recipe)
1/4 teaspoon garlic powder
salt and pepper to taste
1 cup shredded cheddar cheese

Steps:

  • Heat a large skillet over high heat on the stove. Add the sausage and diced onion, cook for 4-5 minutes or until no longer pink. Drain, then add in potatoes, green pepper, red pepper, and broccoli to skillet.
  • In a medium bowl, mix together eggs, milk, garlic powder, and salt and pepper. Pour egg mixture over potato mixture in the skillet. Cover skillet with a lid, lower heat to medium-low and let cook for 10 minutes (don't stir it during this time).
  • Remove lid and continue to let it cook for 5-6 minutes, or until egg mixture is set. Remove skillet from heat and sprinkle with cheese. Let stand for a couple of minutes or until the cheese is melted.
  • Serve and enjoy!

Tips:

  • Choose the right potatoes: For a crispy texture, use waxy potatoes such as Yukon Gold, Red Bliss, or fingerling potatoes. Avoid starchy potatoes like Russets, which tend to become mushy when fried.
  • Cut the potatoes evenly: This will ensure that they cook evenly. If the potatoes are cut too thick, they will take longer to cook and may not get crispy on the outside.
  • Soak the potatoes in water: This will help to remove excess starch and prevent the potatoes from sticking together during frying.
  • Use a hot skillet: This will help to create a crispy exterior on the potatoes. If the skillet is not hot enough, the potatoes will absorb too much oil and become greasy.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the potatoes will not cook evenly and may become soggy.
  • Season the potatoes: Before frying, season the potatoes with salt, pepper, and any other desired spices. This will help to enhance their flavor.
  • Serve the potatoes immediately: Crispy potatoes are best served hot and fresh out of the skillet. If you let them sit for too long, they will lose their crispiness.

Conclusion:

Crispy potatoes over crumbled sausage with poached egg is a delicious and satisfying meal that is perfect for breakfast, lunch, or dinner. The crispy potatoes are the perfect complement to the savory sausage and creamy poached egg. This dish is also very easy to make, and it can be tailored to your own taste preferences. For example, you can use different types of potatoes, sausage, and eggs. You can also add other vegetables to the skillet, such as onions, peppers, or mushrooms. With so many possibilities, you can enjoy this dish again and again without ever getting bored.
