GARLIC BUTTER SMOKED SHRIMP

Garlic Butter Smoked Shrimp image

One of the quickest meals you can make in your smoker is shrimp, done in just 30 minutes. These shrimp are lightly seasoned to let the smoke flavor shine, but add more seasoning if desired. Because of the short smoke time, feel free to use a stronger-flavored wood such as hickory or mesquite. Serve with cheesy grits, rice, atop a salad, or as an appetizer with a remoulade sauce.

1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1 ripe avocado
2 cloves garlic
Juice of 1/2 lemon

Tips:

  • Choose the right shrimp: Use large shrimp (21-25 count) for the best results. Smaller shrimp will cook too quickly and become tough.
  • Clean the shrimp properly: Devein and peel the shrimp, leaving the tails intact. This will help the shrimp cook evenly and make them easier to eat.
  • Make sure the shrimp bundles are tightly wrapped: This will help keep the shrimp from falling apart during cooking.
  • Don't overcrowd the pan: Cook the shrimp bundles in batches if necessary. Overcrowding the pan will cause the shrimp to steam instead of fry, resulting in soggy bundles.
  • Cook the shrimp bundles until they are golden brown and crispy: This will ensure that the shrimp are cooked through and that the wrappers are crispy.
  • Serve the shrimp bundles immediately with the smoky dipping sauce: The dipping sauce adds a delicious smoky flavor to the shrimp bundles.
