Time 25m

Number Of Ingredients 8

1 lb shrimp
1 egg yolk
1 c ice cold sparkling water
1/8 tsp baking soda
1/2 tsp kosher salt
1/4 c cornstarch
3/4 c rice flour (or all-purpose flour)
peanut or canola oil for frying

Steps:

  • 1. Heat oil to 370 degrees in a deep fryer. Salt the shrimp and set it aside.
  • 2. Mix dry ingredients in a bowl and mix well.
  • 3. When the oil is hot (and not before), whisk the egg yolk and the sparkling water together. Mix into dry ingredients.
  • 4. Rapidly dip the shrimp into the thin batter - the consistency should be like melted ice cream -- shake off the excess and drop it into the oil. Do this in batches so the oil temperature does not drop too far. Do not overcrowd the pot.
  • 5. Fry 2-4 minutes, depending upon the size of the shrimp until golden brown. Remove shrimp and allow to drain on paper towels. Repeat batches.
  • 6. Serve with a dipping sauce of just a squeeze of lemon or lime.

Tips:

  • To make sure the shrimp tempura is crispy, use very cold water when mixing the batter. The cold water helps to keep the batter light and airy, which results in a crispy tempura.
  • Do not overmix the batter. Overmixing the batter will make it tough and chewy. Mix the batter just until the ingredients are combined.
  • Use a light, neutral-flavored oil for frying the shrimp tempura. This will help to prevent the tempura from tasting greasy.
  • Fry the shrimp tempura in small batches. This will help to prevent the tempura from sticking together and will also help to ensure that the tempura is cooked evenly.
  • Do not overcrowd the frying pan. Overcrowding the frying pan will lower the temperature of the oil and will result in soggy tempura.
  • Drain the shrimp tempura on paper towels before serving. This will help to remove any excess oil from the tempura.

Conclusion:

Crispy shrimp tempura is a delicious and easy-to-make appetizer or main course. By following the tips in this article, you can make sure that your shrimp tempura is crispy, light, and flavorful. Serve the shrimp tempura with your favorite dipping sauce and enjoy!
