I start this after dinner the night before and forget it so much that when I get up in the morning I wonder what smell so good! I usually do a quick stir about 12-13 hours into it just so anything thats not in the juice gets mixed. Serve it with Mozzarella cheese on crispy rolls for a really good sandwich thats easy.

3 -4 lbs boneless beef roast (I use whatever is on sale and trim some but not all excess fat)
1 (1 ounce) package Good Seasonings Italian salad dressing mix
1 finely chopped onion (optional)
1 finely chopped green pepper (optional)
1 (6 ounce) jar pepperoncini peppers (optional)

Steps:

  • Place roast in crock pot.
  • Add onion and/or peppers if you like.
  • Sprinkle dry mix over the top of all.
  • Cook on low for 24 hours. (Note: NO liquids at all. The moisture stays trapped in the crockpot as long as you don't open it up.).

4 lbs bottom round beef roast
8 ounces balsamic vinaigrette or 8 ounces olive oil and vinegar dressing
1 (1 1/4 ounce) envelope onion soup mix
italian seasoning

Steps:

  • Place roast in crock pot.
  • Pour dressing on top and then sprinkle with onion soup mix.
  • Place lid on crock pot and cook on low for about 10 hours.
  • Remove meat from au jus and shred or slice.

3 -4 lbs rump roast or 3 -4 lbs chuck roast
24 ounces pepperoncini peppers, including half of juice
1 ounce au jus mix
2 cups water
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon bottled garlic (or equivalent)
6 -8 hoagie rolls, for serving
2 cups shredded mozzarella cheese, for topping

Steps:

  • Place roast, pepperocini and half the pepperocini juice in crockpot.
  • Mix water, au jus, oregano, basil and garlic in measuring cup and pour over roast.
  • Cook on low heat for 7 to 8 hours.
  • When roast is tender, pull apart with forks and let simmer in juice another 1/2 hour or so.
  • Serve on toasted Hoagie rolls with cheese, pepperocini and juice from pan for dipping.

2 1/2 cups water
1 teaspoon salt

1 onion, sliced
7 pepperoncini peppers, de-stemmed, reserve 2 cups pepperoncini juice from jar
2 teaspoons beef stock or 2 beef bouillon cubes
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon oregano
1 tablespoon dried parsley
1 tablespoon dried onion
1 tablespoon paprika
1/3 cup parmesan cheese
1 tablespoon celery seed
4 ounces monterey jack cheese, sliced
8 slices sourdough bread
1 garlic clove
2 tablespoons butter
2 tablespoons mayonnaise

Steps:

  • Put the beef in the crock pot and sprinkle with garlic salt and pepper.
  • Add the remaining ingredients (including pepperoncini juice) EXCEPT the last five, stir, and cook on high for three hours.

1/4 cup packed brown sugar
1 (16 ounce) bottle Italian dressing
2 teaspoons italian seasoning
1 large onion, sliced
1 bell pepper, sliced
12 sandwich buns, split and toasted

Steps:

  • Spray the inside of a 4 quart crock pot with cooking spray.
  • If beef is tied, remove strings and netting.

  • Combine the onion soup mix, beef broth (or water), Italian seasoning, and season salt in the bottom of the crock pot. Add the rump roast and cook on high heat all day long for 8 - 10 hours. I make sandwiches with the beef, but it also goes really great over a baked potato! For sandwiches, use your favorite kind of bread or roll. If you want to really pack on the calories add mozzarella cheese.

1 tsp italian seasoning
1/4 tsp cayenne pepper
1/4 tsp black pepper
1/4 c water
16 oz canned sliced & undrained...or whole pepperoncinis
1 medium red bell pepper--julienned
1 medium green bell pepper--julienned
1 clove garlic..minced
1 pkg reduced- sodium onion soup mix
2 Tbsp woercestershire sauce
2 loaves italian bread, cut into halves lengthwise..4 pieces.

Steps:

  • 1. Cut roast in half, place in crock pot. Sprinkle with italian seasoning, cayenne and black pepper. Add water. Cover and cook on high 4 hours. Or until meat is tender. Remove roast, (Keep crock pot covered on high.) shred meat with two folks and return to crock pot. In a small bowl, combine pepperconcinis,peppers,garlic,soup mix,and Worcestershire sauce. Pour over meat. Cook on high 1 hour longer, or until peppers are tender.

This dish smelled wonderful while cooking in the Crock Pot all day. It is a meal all by itself, and just a salad on the side is perfect.

3 lb beef roast
2 large onions, chunked
1 jar(s) pepperocini peppers with juice
2 pkg mushroom gravy packets
3 Tbsp Italian seasoning
2 1/2 tsp black pepper
2 Tbsp minced garlic

Steps:

  • 1. At the beginning of the day, place roast in large Crock Pot with chunked onions, garlic, pepper and Italian seasoning and about 2 cups of water, and the juice from the pepperocini peppers. I've sliced the meat in thin slices prior to cooking, but I like the texture of the meat when pulled apart, and less work.
  • 2. Cook on med-low most of the day until the roast starts falling apart and will easily pull apart with a fork. 8-9 hours until meat pulls apart with a fork.
  • 3. Remove meat from Crock Pot, saving all the drippings.
  • 4. In seperate bowl, mix the gravy packets with the water as directed; put meat back in crock pot with the drippings, the gravy mix, stir well and let simmer about 1/2 hour.
  • 5. Tear apart meat with forks (shredding) and put it into the pot as you are tearing apart the meat. Discard all fatty parts.
  • 6. Once meat is in the juices (should thicken up with the gravy packets) let cook about another hour.
  • 7. Serve on harder long rolls...I prefer a French type, crusty on the outside and soft on the inside. The bread soaks up the gravy. It's especially good with some shredded mozzarella or provolone on the sandwich... serve the pepperocinis on the side or in the sandwich.
  • 8. *A little more flavorful version is to put in the peppers (stems removed) during the cooking process.
