Mexican Style Crock-Pot Pork image

I had a small pork roast and wanted to do something different with it. So, I started adding a few things to my crockpot and came up with this. You can use this as a filling for burritos, tacos, chimichangas, or even put it on a hamburger bun. My son thought it was even good cold. :) Submitted to " ZAAR "( now Food.com ) on July...

1 1/2 lb boneless pork roast
1/2 c each of red and green pepper, diced
1/3 c finely chopped celery
1/2 c finely chopped sweet onion
1 tsp ground cumin
1/2 tsp each of seasoning salt and garlic powder,( feel free to add more garlic powder)

Tips:

  • For the best flavor, use a pork shoulder or butt roast with a good amount of marbling.
  • Sear the pork in a hot skillet before adding it to the slow cooker. This will help to brown the meat and develop its flavor.
  • Use a variety of spices and seasonings to create a flavorful Mexican pork dish. Some good options include chili powder, cumin, paprika, garlic powder, and onion powder.
