Time 8h15m

Yield 4 serving(s)

Number Of Ingredients 9

4 large vidalia onions or 4 large sweet onions, very thinly sliced
2 (1/4-1/2 cup) ounces unsalted butter
3 cups beef stock
1 cup dry white wine
1/4 cup medium-dry sherry
1 teaspoon reduced-sodium Worcestershire sauce
1 clove garlic, minced
4 slices French bread, buttered
1/2-3/4 cup romano cheese or 1/2-3/4 cup parmesan cheese, shredded

Steps:

  • Using a large frying pan, slowly sauté the onions in butter until limp and glazed.
  • Transfer to crock-pot.
  • Add beef stock, white wine, sherry, Worcestershire and garlic.
  • Cover and cook on low for 6 to 8 hours.
  • Place French bread on a baking sheet.
  • Sprinkle generously with cheese.
  • Place under preheated broiler until lightly toasted.
  • To serve, ladle soup into bowl.
  • Float a slice of toasted French bread on top of each bowl.

Tips:

  • To enhance the flavor of the soup, use a variety of onions, such as yellow, white, and red onions.
  • For a sweeter soup, use caramelized onions. To caramelize onions, cook them slowly in butter or oil until they become soft and golden brown.
  • If you don't have dry white wine, you can substitute it with an equal amount of chicken broth or water.
  • For a vegetarian version of the soup, omit the beef broth and use vegetable broth instead.
  • To save time, you can use pre-sliced onions.
  • If you want a thicker soup, add a cornstarch slurry (equal parts cornstarch and water) to the soup and cook until thickened.
  • Serve the soup with crusty bread, crackers, or a green salad.

Conclusion:

This classic French onion soup is a delicious and easy-to-make dish that is perfect for a cold winter day. With its rich, flavorful broth, caramelized onions, and melted cheese, this soup is sure to warm you up from the inside out.
