Time 16h

Yield 12 serving(s)

Number Of Ingredients 16

1 lb dried pinto bean
1 teaspoon baking soda
1 lb bacon or 1 lb salt pork, diced
2 (12 ounce) bags frozen chopped onions or 3 large onions, diced
3 garlic cloves, minced fine
4 green bell peppers, diced
2 bay leaves
2 cups diced ham or 2 small ham hocks
1 tablespoon kosher salt
2 tablespoons dried oregano
2 tablespoons ground cumin
1/2 tablespoon ground black pepper
1/2 cup packed dark brown sugar
1/2 tablespoon Worcestershire sauce
1 tablespoon dried thyme
3 large tomatoes, peeled seeded and diced or 1 (28 ounce) can diced tomatoes

Steps:

  • Pick over beans, removing any pebbles, and any broken or discolored beans. Cover with plenty of cold water and let soak at room temperature over night.
  • Drain beans and add to a large pot with baking soda and enough water to cover by 2". Bring to a boil, reduce heat and simmer 10 minutes.
  • Saute bacon in a large skillet until quite crispy. Drain with slotted spoon and transfer to crockpot. Add onion, garlic and bell peppers to bacon fat remaining in skillet and saute until onion is translucent and vegetables are soft; add to crockpot. Drain beans well and add to crockpot with bay leaves and ham hocks. Stir together remaining ingredients and add to pot. Add enough water to cover the beans (about 2-3 cups, depending on your pot).
  • Cover and cook on low 8 to 10 hours. Add additional water if needed, but avoid making the sauce too thin. Serve hot. Be sure to remove and discard bay leaves and ham bones before serving.

SLOW COOKER BAKED BEANS

Slow Cooker Baked Beans image

Homemade Baked Beans are so easy to make. Our slow cooker baked bean recipe is a delicious combination of tender beans and a delicious sweet and savory sauce. You will love this technique and never go back to canned baked beans again!

Provided by Katie Clark

Categories     Easy Side Dishes

Time 6h6m

Number Of Ingredients 11

1 lb pinto beans
Water (enough to cover beans)
1/2 cup white onion, diced
1/2 cup bacon bits
1 Tablespoon Garlic
1 1/2 teaspoon salt
2 tablespoon mustard
1/4 cup brown sugar
1 cup BBQ sauce
1/4 cup ketchup
1 tablespoon liquid smoke

Steps:

  • Place pinto beans in a large bowl and cover with water. Soak for 6-12 hours.
  • Once the beans have soaked, place them in your slow cooker.
  • Add onion, bacon bits, and garlic to the slow cooker.
  • In a separate bowl, mix together mustard, brown sugar, BBQ sauce, ketchup, and liquid smoke.
  • Pour over the rest of the ingredients in the slow cooker and mix.
  • Cook on low from 6-8 hours, or until the beans are cooked all the way through.

Tips:

  • Choose the right beans: Different beans have different cooking times and textures. For this recipe, we recommend using dried beans that have been sorted and rinsed.
  • Soak the beans overnight: Soaking the beans overnight helps to reduce the cooking time and makes them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a slow cooker: A slow cooker is the perfect appliance for cooking beans. It provides a gentle, even heat that helps to cook the beans evenly and prevent them from scorching.
  • Add flavorings: Beans have a mild flavor, so it's important to add flavorings to your dish. Common flavorings for beans include onions, garlic, celery, carrots, bacon, and ham.
  • Cook the beans until they are tender: The cooking time for beans will vary depending on the type of beans and whether or not they were soaked. In general, beans will take 6-8 hours on low or 3-4 hours on high in a slow cooker.

Conclusion:

Crock-Pot savory beans are a delicious and easy way to enjoy beans. With just a few simple ingredients and a slow cooker, you can create a hearty and flavorful dish that can be served as a main course or a side dish. These beans are also a great source of protein, fiber, and antioxidants. So next time you're looking for a healthy and delicious meal, give crock-Pot savory beans a try.
