AMAZING CROCKPOT BEEF STEW
Steps:
- Directions: Cube meat into small pieces (less than 1") and dredge in flour, salt, garlic powder, black pepper in a large ziploc bag until well coated. In a large skillet or dutch oven, add the olive oil and heat on medium high. Add the meat and brown on all sides turning frequently. Set meat aside. In crockpot, combine all ingredients and mix well, set on HIGH for 6 hours, add meat last and stir thoroughly to mix, then set and leave alone for 6 hrs. Meat will be perfectly tender and flavorful. Stew should be sufficiently thick with the addition of the meat browned in flour. If not, add 1/8 cup corn starch mixed with 2 tbsp of water and combine thoroughly. Serve with bread and red wine

I'm a plain cook and I like to let the main ingredients flavor a recipe as much as possible just using salt & pepper as my seasonings. If you are looking for fancy, spiced up or a recipe that will take you more than 10 minutes to add to the crockpot -- please skip this one. If you are looking for a easy-to-make, simple, basic yet delicious beef stew and you are OK with the fact that it's able to stand on it's own without herbs, spices or ingredients you can't pronounce, then you may be interested in this one. - This recipe is very forgiving -- so if you only have 3 potatoes, no biggie. The important thing is that you get what you have in a crockpot!
- Amount of beef is flexible -- just buy around amount called for and don't sweat being exact.
- All veggies need to be washed & cut into thick slices or chunks.
- Potatoes should be left UNPEELED. I prefer red potatoes because I always leave the peel on - Yukon Gold are also a good choice).
- Ready? Here Goes!
- Dump beef in crockpot.
- Dump thickly sliced carrots, thick chunks of potato, celery & onion in crockpot.
- Open can of diced tomatoes with the juice, pour on top of beef and veggies.
- Dump 1 cup water and about a palm-sized amount of salt in the crockpot and give it a bit of a stir.
- Set crockpot to low and cook for 6-8 hours. If it ends up cooking longer - no biggie. It won't hurt the stew.
- If you feel the stew is too liquid-- right before you get ready to serve, you can add 4 tablespoons of corn starch to about 1/2 cup of water until dissolved and pour over stew and stir until the broth thickens.

- 1. Mix together first five ingredients in a large plastic bag. Mix together first five ingredients in a large plastic bag.Add beef stew chunks, coating well.
- 2. Place coated meat into a 2 quart slow cooker then top meat with potatoes and carrots.
- 3. Mix together beef broth and worcestershire sauce, and pour over potatoes.
- 4. Top with bay leaf,and cover.Cook on low for 6 hours.
- 5. After cooking remove bay leaf and stir so meat and veggies are combined.Serve with your favorite bread to sop up the juices.
IRISH GUINNESS BEEF STEW CROCKPOT RECIPE
Steps:
- Step 1 Peel and julienne the parsnips into 2 inch long pieces to match the length of the baby carrots. Add the pearl onions, baby carrots, parsnips, and potato quarters into the bottom of the crock pot. Step 2 Season the flour in a flat bowl and dredge the beef chunks. Step 3 Heat the oil in a large skillet. Add the floured beef cubes and brown them on all sides. You may need to complete this in two steps depending on the size of your skillet. Step 4 Remove the beef from the pan and add to the crock pot. Add the garlic to the skillet and brown for one minute. Step 5 Mix 1 cup of the beef broth with the red wine vinegar and dijon mustard in a small pitcher. Pour into the pan, scraping the bottom to loosen any beef or garlic. Step 6 Add the stock from the skillet, the additional beef stock, water and Guinness to the crock pot. Step 7 Add the thyme, bay leaves, cloves, brown sugar and chocolate chips to the crock pot. Mix ingredients together. Step 8 Place the lid on the crock pot and cook the stew on low for about 12 hours. Try not to lift the lid of the crock pot too often during cooking, since this can allow the heat escape and slow down cooking. The stew is done when the vegetables are tender. Step 9 Put the corn flour in a small pitcher or bowl and blend with 1/4 cup of cold beef broth, making sure the mixture is smooth. Turn the crock pot to high and add the thickening. Season the stew according to taste at this point. Cook for an additional 20 minutes to allow the stew to thicken. Stir occasionally. Step 10 Remove the bay leaves and discard. Serve in a large soup bowl. Tastes great with Irish Brown Bread.

I bought a nice shoulder roast and decided to make a beef stew with it. - In a large bowl add flour and cubed beef, cover meat with flour until well coated and set aside.
- In a large skillet heat oil until hot but not smoking, then add beef.
- When meat starts to brown, sprinkle with seasonings and stir until meat is coated ( Remember, you just want to brown the meat not cook it until it's done ).
