3 tablespoons hoisin sauce, plus
1/4 cup hoisin sauce
2 teaspoons minced garlic
1 tablespoon minced fresh ginger
1 teaspoon sambal oelek
6 green onions, cut on the diagonal into thin slices (include some green tops)
1 (12 inch) Boboli pizza crusts
1 cup thinly sliced white onion
1 1/2 cups coarsely shredded mozzarella cheese
1/2 cup lightly packed cilantro leaf

Steps:

  • Position an oven rack in the center of the oven; preheat oven to 500°.

1 (4-inch) ball prepared dough, at room temperature
2 tablespoons olive oil
1/4 cup hoisin sauce (available in the Asian section of most grocery stores)
2 grilled skinless, boneless chicken breasts, diced or equivalent amount of store-bought BBQ chicken, or any left-over chicken
4 scallions, finely sliced
2/3 lightly-packed cup cilantro leaves, stems removed before measuring
1/2 red bell pepper, seeds and membranes discarded, sliced into paper-thin strips
1 cup grated mozzarella
Salt and freshly ground pepper

Steps:

  • Sprinkle your rolling surface with a handful of flour or cornmeal. Place dough directly in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • Place dough in the center of the cooking grate, directly over the heat for one to three minutes, until the crust is well marked and browned. Flip dough and spread hoisin sauce evenly over cooked side of crust. Spread chicken, scallions, cilantro, and bell pepper evenly over crust. Sprinkle cheese over the top. Move to Indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.

2 cups ricotta cheese
8 garlic cloves, minced
4 cups mozzarella cheese
2 medium zucchini, ends trimmed and sliced 1/4 inch thick

Steps:

  • Preheat oven to 400 degrees.
  • Drizzle olive oil on one large or two small cookie sheets, then roll out the dough. Poke with fork and season with salt and pepper. Place in the oven for 5 or 6 minutes.

2 (12 inch) pizza crusts, prepared pizza dough, for two 12-inch pizzas
2 tablespoons olive oil
1/2 cup ricotta cheese
8 ounces taleggio, cut into 1/2 inch pieces (or Fontina)
12 fresh sage leaves, torn into tiny pieces
4 -6 ripe figs, cut into 1/4 inch slices
1/2 cup freshly grated parmigiano-reggiano cheese
2 tablespoons honey

Steps:

  • *30-60 minutes before ready to bake the pizzas, place a baking stone on a rack in the lowest level of the oven; turn on oven to the maximum temperature-450° to 500°.
  • Place 1 ball of pizza dough on a floured surface; holding your hands flat, pat the ball out evenly with your fingers, lifting it and turning it over several times, until it reaches a 12-inch circle (do not knead or handle the dough any more than you need to); if the dough seems sticky, dust it lightly with flour.
  • Dust a pizza peel with flour; carefully transfer the circle of dough to the peel, reshaping it if needed.
  • Shake the peel once or twice to make sure the dough does not stick; if it does, lift the dough and sprinkle the peel with more flour.
