32 slices French bread, 1/4 inch thick
1/4 cup olive or vegetable oil
3 roma (plum) tomatoes, diced (2 cups)
3 cloves garlic, finely chopped
1/2 cup shredded Parmesan cheese
2 tablespoons chopped fresh basil leaves
1/2 teaspoon salt

Steps:

  • Heat oven to 425°F. Place bread on ungreased cookie sheet. Brush 2 tablespoons of the oil on bread. Bake 4 to 5 minutes or until light golden brown.
  • Mix tomatoes, remaining 2 tablespoons oil, the garlic, cheese, basil and salt. Place about 1 tablespoon tomato mixture on each warm bread slice.

1 Tbs. olive oil
12 Tbs. mascarpone cheese
1 cup fresh blueberries
1 Tbs. balsamic vinegar
1 tsp. sugar
½ tsp. kosher salt
¼ tsp. freshly cracked black pepper
2 Tbs. thinly sliced fresh basil leaves

Steps:

  • Preheat oven to 375°F. Brush bread slices with olive oil. Arrange on baking sheet and bake until crisp and toasted, 8-10 minutes, turning once.
  • Meanwhile, in medium non-stick skillet, heat blueberries, vinegar and sugar just until blueberries are tender and a sauce forms, 4-5 minutes. Set aside and let cool.

1 loaf French bread, such as ficelle or demi-baguette, thinly sliced on the diagonal
4 1/2 teaspoons extra-virgin olive oil, plus more for brushing
1 1/2 pounds assorted fresh garden and cherry tomatoes
1/2 teaspoon coarse salt
Pinch of freshly ground pepper
1/2 cup loosely packed fresh basil leaves, plus small sprigs for garnish
1/4 cup loosely packed fresh chervil
1 tablespoon red-wine vinegar
