CRUNCHY FRIED SHRIMP
I've guessed on cook time here. These are the crunchiest shrimp I've had outside of a restaurant! This makes alot, but if you are going to make these you may as well go all out!! Everyone loves them! These have received so many mixed reviews that I thought maybe I should mention that I deep fry them in a Presto Fry Daddy and not very many at a time. I never said they were easy...and I get better each time I do it. Thanks for giving them so much attention!

FIRECRACKER SHRIMP ROLL WITH CRAB AIOLI
Inspired by a shrimp po'boy with crab mayo seen on 'Diners, Drive-Ins and Dives,' I decided to do an extra spicy version and give it a 4th of July-friendly name. The result is an explosively flavored combination of hot, crunchy shrimp and cold crabby mayo. This was one of the best things I've had in a long time, and that's after eating it barely warm; for best results, though, be sure to enjoy this just as soon as it's safe to eat, in all its crunchy glory.

Steps:
- Whisk mayonnaise, lemon juice, garlic, 1/2 teaspoon cayenne and mustard in small bowl to blend. (Can be made 1 day ahead. Cover tightly with plastic wrap; refrigerate.)
- Pour enough oil into heavy large pot to reach depth of 2 inches; heat to 375°F. Mix cornmeal, salt and 1/2 teaspoon cayenne in medium bowl. Add shrimp to bowl; toss to coat. Working in batches, add shrimp to hot oil and deep-fry until shrimp are golden and opaque in center, about 1 1/2 minutes. Using slotted spoon, transfer shrimp to paper towels to drain.
- Place aioli in center of platter; surround with shrimp and serve.
Tips:
- To make sure your shrimp is cooked to perfection, use a meat thermometer to check that it reaches an internal temperature of 145°F (63°C).
- If you don't have panko breadcrumbs, you can make your own by processing regular breadcrumbs in a food processor until they are fine and crumbly.
- To add a bit of spice to your shrimp, sprinkle some cayenne pepper or paprika into the breadcrumb mixture before coating the shrimp.
- Be careful not to overcrowd the pan when frying the shrimp. This will cause the shrimp to steam instead of fry and will result in soggy shrimp.
- For a healthier version of this dish, you can bake the shrimp instead of frying it. Preheat your oven to 400°F (200°C) and bake the shrimp for 10-12 minutes, or until cooked through.
Conclusion:
Crunchy fried shrimp with cayenne aioli is a delicious and easy-to-make dish that is perfect for any occasion. The shrimp is coated in a flavorful breadcrumb mixture and then fried until golden brown and crispy. The cayenne aioli adds a touch of spice and creaminess that takes this dish to the next level. Serve this dish with your favorite sides, such as rice, mashed potatoes, or roasted vegetables.
