BOK CHOY RAMEN NOODLE SALAD

Bok Choy Ramen Noodle Salad image

Great side dish for a BBQ or lunch buffet. This was my Mom's neighbor's recipe and I got the same recipe from my friend and neighbor (small world). The ramen noodles add and nice crunch and this is very simple to prepare. You can half the ingredients for a smaller salad and you can also use romaine lettuce instead of bok choy if you like. My friend, Alisa, adds kidney beans to the salad.

Tips:

  • Use fresh, crisp ingredients: Wilted or soggy vegetables will not make for a good salad. Ensure all your ingredients are fresh and crisp before assembling the salad.
  • Don't overcook the ramen noodles: Ramen noodles should be cooked al dente, slightly firm to the bite. Overcooked noodles will be mushy and unpleasant in the salad.
  • Use a light dressing: A heavy dressing will overwhelm the delicate flavors of the salad. A simple vinaigrette or a light Asian-inspired dressing is a good option.
  • Add some crunch: The crunch of the ramen noodles and bok choy is essential to this salad. If you want even more crunch, you can add some chopped nuts or seeds.
  • Serve immediately: This salad is best served immediately after it is made. The ramen noodles will start to soften over time, so don't let it sit for too long before eating.

Conclusion:

This Crunchy Ramen Bok Choy Salad is a delicious and easy-to-make salad that is perfect for a light lunch or dinner. It is packed with fresh vegetables, crunchy ramen noodles, and a light and flavorful dressing. With its unique combination of textures and flavors, this salad is sure to be a hit with everyone who tries it.
