EGG AND BACON QUICHE (CRUSTLESS)

Egg and Bacon Quiche (Crustless) image

This probably has to be the easiest quiche ever! I'm not sure where the recipe came from, but mum would make it all the time and it's just so nice as it isn't too heavy. If desired, you could add 1 cup grated zucchini (excess moisture squeezed out) or a can of creamed corn to the mixture or add some tomato slices to the top of the quiche before baking.

Yield Makes one 10-inch quiche

Number Of Ingredients 11

6 tablespoons all-purpose flour, plus more for work surface
1/2 recipe Flaky Tart Dough
10 large eggs
2 cups creme fraiche
2 cups whole milk
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons finely chopped fresh thyme
5 slices center-cut bacon, sliced crosswise into 1/4-inch pieces
1 medium or 2 small zucchini, peeled lengthwise into 1/8-inch-thick ribbons
1/2 cup gruyere

Steps:

  • On a lightly floured work surface, roll dough into a 16-inch round. With a dry pastry brush, sweep off any excess flour; fit dough into a 2-inch deep-dish tart pan with a removable bottom, gently pressing it into the sides. Using a sharp knife, trim the dough evenly with the edge of the pan. Cover with plastic wrap; chill tart shell until firm, about 20 minutes.
  • Preheat oven to 375 degrees.
  • Line the tart dough with a sheet of parchment paper and fill with pie weights. Transfer to oven and bake until light brown, about 25 minutes. Remove weights and parchment paper and continue baking until golden brown, about 5 minutes. Transfer to a wire rack; let cool completely.
  • In the bowl of an electric mixer fitted with the whisk attachment, mix together 1 egg and flour on high speed until smooth. Add the remaining 9 eggs and continue mixing until well blended.
  • Place creme fraiche in a medium bowl and whisk until smooth; add milk and continue whisking until well combined. Add to mixer along with salt, pepper, and thyme; mix until well combined. Strain mixture into a large bowl through a fine mesh sieve.
  • Place bacon, zucchini ribbons, and cheese in prepared tart shell. Pour over egg mixture until tart shell is full (you may not need to use all of the egg mixture). Bake 20 minutes; reduce temperature to 325 degrees, and continue baking until filling is slightly firm, rather than liquid, and crust is a deep golden brown, 40 to 50 minutes more. Transfer quiche to a wire rack to cool until set, about 20 minutes. Serve warm or at room temperature. To reheat, cover quiche with aluminum foil and bake in an oven heated to 325 degrees for about 15 minutes.

POTATO AND BACON CRUSTLESS QUICHE

Potato and Bacon Crustless Quiche image

This is a wonderfully flavorful, light, and creamy quiche which is very hearty and stick-to-your-ribs thanks to the addition of the diced potato! I like to bake up a couple extra potatoes any time I'm baking some and keep them in the refrigerator, for recipes just like this one! You can change up the cheese to any flavor you'd prefer.

EASY CRUSTLESS QUICHE

Easy Crustless Quiche image

Yet another crustless quiche that is designed for a low-carb, high-fat (LCHF) diet. It is very rich and cheesy. The Parmesan and butter on the bottom form a nice skin on the bottom that really helps. The egg and cream mixture is quite flexible and the ratio of egg to cream and the heaviness of the cream is a personal choice. The cheese can easily be replaced with any hard cheese that holds up well when shredded such as Swiss, Cheddar, Gouda, or Provolone. The meats can be replaced with anything that isn't too wet; whether it is meat or vegetable.

Tips:

  • Choose the right zucchini: Look for small to medium-sized zucchini that are firm and have smooth, unblemished skin. Avoid zucchini that are large, as they tend to be more watery and have a stronger flavor.
  • Use a sharp knife: A sharp knife will help you make clean, even slices of zucchini. This will ensure that the zucchini cooks evenly and has a nice texture.
  • Don't overcrowd the pan: When cooking the zucchini, make sure not to overcrowd the pan. This will prevent the zucchini from cooking evenly and will make it more likely to steam rather than brown.
  • Season the zucchini well: Season the zucchini with salt and pepper before cooking. This will help to enhance the flavor of the zucchini and make it more enjoyable to eat.
  • Don't overcook the zucchini: Zucchini cooks quickly, so be careful not to overcook it. Overcooked zucchini will be mushy and will lose its flavor.
  • Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of the quiche. Use a cheese that melts well and has a strong flavor, such as cheddar, Gruyère, or Swiss cheese.
  • Don't overbeat the eggs: Overbeaten eggs will make the quiche tough. Simply whisk the eggs until they are combined.
  • Bake the quiche at a high temperature: Baking the quiche at a high temperature will help it to rise and will give it a golden brown crust.
  • Let the quiche cool before serving: Let the quiche cool for at least 10 minutes before serving. This will allow the quiche to set and will make it easier to slice.

Conclusion:

Crustless bacon zucchini quiche is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is also a great way to sneak some extra vegetables into your diet. With its simple ingredients and straightforward instructions, this quiche is sure to become a favorite in your household.
