2 ounces small chorizo or pepperoni slices, about 3/4-inch diameter, optional
Special equipment: 1 round ovenproof pie dish, 8 or 9 inches in diameter

Steps:

  • Preheat the oven to 400 degrees F. In a small bowl, beat the egg with the flour, salt, to taste, and milk to make a smooth batter.
  • Butter a round ovenproof pie dish, then stir half the grated cheese into the batter, before pouring it into the dish.
  • Bake for 30 minutes. Take the dish out of the oven, sprinkle with the remaining cheese, and add the chorizo or pepperoni, if using, - or anything else - now, too. Return the dish to the oven and cook for another 2 or 3 minutes to make sure it's heated through.

Steps:

  • In a cast-iron or oven proof skillet, brown and crumble the ground sausage or pork until cooked through. (About 5-6 minutes)
  • Once the ground sausage is cooked through, stir in Italian seasonings, garlic powder, salt and marinara sauce.
  • Push the ground sausage off to the sides of the skillet and add bell pepper or any vegetable that needs to be cooked into the center. Cook until softened, then stir into the rest of the ground meat. Remove from heat.

1 1/2 pounds pizza dough
1/3 cup olive oil
6 tablespoons grated Parmesan

Steps:

  • Special equipment: 6 (10-ounce) ramekins
  • For the Tomato Sauce: Warm the olive oil in a small saucepan over medium heat. Add the garlic, rosemary, and pancetta. Saute until the pancetta is crisp and golden, about 5 minutes. 4 sun-dried tomatoes, if available, cut into slivers

Steps:

  • In an 11- or 12-inch skillet, preferably the nonstick kind, spread the shredded cheese evenly over the bottom. Turn heat to medium.
  • As the cheese melts, sprinkle the seasonings on top and arrange the bits of meat and tomatoes according to personal preference.
  • Fry the cheese until the edges become crisp and brown. Meanwhile, fill the kitchen sink with about 1 inch of cold water.

Chicago-style pizza is great, but it can be a pain to make and way too expensive to buy from a restaurant... so I came up with this easy-to-make recipe. The best Chicago pizzas usually feature cornbread crusts, but the pie crusts make a surprisingly tasty substitute! I use this recipe by Dan-Amer #1 for the sausage (http://www.food.com/recipe/homemade-bulk-italian-sausage-chicago-style-329000), but store-bought sausage should work just as well.

1 (9 inch) frozen pie crusts, thawed
1 lb Italian sausage, sliced or crumbled
1 small onion, sliced

1/2 teaspoon italian seasoning (optional)

Steps:

  • Preheat oven to 400°F.
  • Bake the pie crust according to your package's directions. I usually prick the bottom and sides of the crust all over with a fork and bake it for 10 minutes, or until it becomes slightly golden. Remove, and set aside.

Add the onion and mushrooms and cook for a further 5 minutes, or until the sausage is cooked and the onions are soft and translucent. Drain of any excess fat.   • Sprinkle the mozzarella and parmesan on the bottom of your pie crust. Top the cheese with the sausage mixture, and spread it out evenly. Next, spread the pizza sauce over the top, making sure the filling is completely covered. Finally, you can sprinkle the Italian seasoning and grated cheese on top, if you wish.
  • Bake for 30 minutes. Let cool for at least 5 minutes before serving.
