2 cups sweet potatoes, mashed
3 eggs
1 tablespoon flour
2/3 cup maple syrup (honey and sugar also work)
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1 pinch sea salt
1 cup vanilla soymilk

Steps:

  • Beat eggs, then the sugar and flour.
  • Add everything else and beat together.
  • Grease a 9" pie pan with cooking spray, then pour the mixture inches Bake at 400F for 35-40 minutes.

2 large sweet potatoes
3 Tbsp clarified butter (ghee), divided in half for topping
1/2 c maple syrup
1 c brown sugar, divided in half for topping
2 eggs
1 tsp vanilla extract
1 Tbsp cinnamon, divided in half for topping
1 tsp nutmeg
1/4 c lactose free milk,your choice
1/4 c coconut flour
1 c pecans, chopped

Steps:

  • 1. start by boiling the sweet potatoes until soft, cool & peel.
  • 2. in a food processor or blender..mix the sweet potatoes, add in half the clarified butter, vanilla extract, maple syrup, half the cinnamon, nutmeg, eggs & milk...mix well
  • 3. for topping, combine the coconut flour, cinnamon, brown sugar, butter & chopped pecans...in a pie dish add the sweet potato mixture & spread the topping evenly.
  • 4. bake at 350 degrees for 45 mins, turn oven off and leave in for another 15 mins...take out, let cool & refrigerate

I didn't have the exact recipe but I had a vague idea of how it was made and I can remember the taste very well. So I went to the store and bought some sweet potatoes...

3 - 4 large sweet potatoes
1 c brown sugar, firmly packed
1 c sugar
3 large eggs
1 c cream
1 tsp vanilla extract
6 Tbsp cocoa powder, unsweetened

Steps:

  • 1. Cook sweet potatoes in the method you prefer, (microwave,roast or steam) but do not boil them because their sweetness would get lost in the boiling water. peel them when they are cool enough to handle.
  • 2. Preheat oven to 325. Process peeled sweet potatoes in the food processor till smooth, then add all the other ingredients and process for a few minutes till everything is well incorporated and thickened.
  • 3. Pour into an oven proof dish and bake for 45 minutes, (it will be a bit soft in the center but will settle when it cools) Refrigerate for a few hours before serving.
