4 chicken thighs, cubed and with skin removed
150 ml filter coffee
500 ml white wine
150 ml cream
4 garlic cloves, finely sliced
50 g butter
4 red chilies, pounded to a paste
1 bay leaf
12 coffee beans
salt
pepper

Steps:

  • Add the butter to a pan and fry the cubed chicken. Mix-in the chillies, garlic and bayleaf.
  • When the chicken is golden brown in colour remove from the pan and set aside. Add the wine and coffee to the pan and continue cooking until the sauce has thickened appreciably then add the coffee beans and cream.
  • Mix well, return the chicken pieces to the pan and cook for 15 minutes. Serve on a bed of rice.

6 skinless chicken breasts
1 tablespoon oyster sauce
2 teaspoons olive oil
2 garlic cloves, minced
2 teaspoons barbecue sauce
1/2 teaspoon Worcestershire sauce
1/4 cup brewed coffee
1 teaspoon brown sugar

Steps:

  • Marinate the chicken with the oyster sauce. Season with salt and pepper.
  • Heat the olive oil in a pan, and fry each side of the chicken until cooked. Set aside and keep warm.
  • In the same pan, fry the garlic until fragrant, then add the barbeque sauce, worchestershire sauce, brewed coffee and brown sugar. Allow it to simmer for 2 minutes.

3 cloves garlic, minced
8 Roma tomatoes - peeled, seeded, and chopped

  • Heat oil in a pan over medium heat and saute the onions until translucent . Add chicken and when lightly browned add the remaining filling ingredients , stirring very gently (The mixture should be moist . If necessary add a little more cream or water).
  • Fill tortillas with this mixture and form rolls squeezing them lightly by hand . pass them in beaten egg, then bread crumbs mixed with Parmesan cheese. Fry in hot oil for a few seconds and pass by the absorbent paper to remove excess fat . Hot aside.
  • Put warm pineapple with syrup in a pan over medium heat and add the remaining ingredients for the sauce .Cook stirring constantly until sauce thickens slightly and add a pinch of salt and pepper if necessary . Serve the rolls in portions with coffee sauce in a bowl aside.
