3 tomatoes
1 cucumber (optional)
½ tablespoon parsley (chopped)
2 tablespoons tahini paste
2 tablespoon lemon juice
2 teaspoons water (cold)
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • In a bowl, mix all the ingredients together. The tahini mixture will become watery, then it will shrink, and then again it will become a bit loose while you mix. If your tahini dressing is too thick, add a little bit of cold water and mix again. Adjust ingredients to your liking.
  • Chop the tomatoes and the cucumber into cubes. Add the tahini dressing and mix the salad.
  • Sprinkle with chopped parsley and serve.

1 Lime Tahini Sauce recipe,
1/2 large English cucumber ((seeded and diced into small cubes))
1 to 2 tomatoes ((vine-ripe, diced into small cubes))
1 small jalapeno pepper ((chopped, remove the seeds for less spicy))
1/2 tsp Aleppo pepper ((optional))
Kosher salt ((to taste))
lime juice ((if needed))

Steps:

  • For the dressing, make my lime tahini sauce recipe by blending tahini paste, lime juice, water, kosher salt together, then stir in a good cup of parsley. You can do this one night ahead of time and save it covered in the fridge. (If the tahini sauce becomes thicker as it sits in the fridge, you can stir in more lime juice or water to loosen it).
  • To make the salad, in a medium mixing bowl, combine the tahini sauce with the diced cucumbers, tomatoes, and jalapeno. Add the Aleppo-style pepper, if using. Mix well. Taste and add salt to your liking. And if needed, add more lime juice.

2 room temperature lemons, juice of
1 minced garlic clove (I add 4 myself)
1/2 teaspoon cumin
1/2 teaspoon coriander
1 pinch cayenne pepper (I add 2 pinches then put some on top too)
fresh ground pepper
water (optional)
2 cucumbers

Steps:

  • Stir the tahini and lemon juice together until well blended. Add the rest of the ingredients except the cucumbers and stir to blend.
  • Allow the mixture to stand at room temperature for about 30 minutes. (If you put it in the refrigerator, it will thicken up). If it is too thick to pour, you can use it as a dip for the cucumbers OR you can thin it out with room temperature water (NOT cold) which is what I do.
  • Peel the cucumbers and slice them into rounds. Put them in a large bowl and pour the dressing over them. Toss to coat.

Tips:

  • For the freshest flavor, use ripe, in-season cucumbers and tomatoes.
  • If you don't have fresh herbs, you can use 1/2 teaspoon of dried dill or basil.
