CUCUMBER-CRAB CANAPéS

Yield Makes 28 canapés

Number Of Ingredients 6

1 6-ounce can crabmeat, drained, or 4 ounces fresh crabmeat
1/4 cup mayonnaise
3 tablespoons minced red onion
1 tablespoon chopped fresh tarragon
2 teaspoons fresh lemon juice
1 English hothouse cucumber

Steps:

  • Gently mix first 5 ingredients in medium bowl; season with salt and pepper.
  • Cut twenty-eight 1/4-inch-thick round slices from cucumber (reserve remaining cucumber for another use). Arrange cucumber slices on platter. Top each slice with crab mixture.

Tips:

  • Use fresh, crisp cucumbers: The fresher the cucumbers, the better the crab snacks will be. Look for cucumbers that are deep green in color and have no blemishes.
  • Cut the cucumbers evenly: This will help to ensure that they cook evenly. If the cucumbers are not cut evenly, some pieces may be overcooked while others are still undercooked.
  • Do not overcook the cucumbers: Overcooked cucumbers will be mushy and lose their flavor. Cook them just until they are tender-crisp.
  • Use high-quality crab meat: The quality of the crab meat will greatly affect the taste of the crab snacks. Look for crab meat that is fresh, flaky, and has a mild, sweet flavor.
  • Season the crab meat well: The crab meat should be seasoned with a variety of spices and herbs to enhance its flavor. Some good options include salt, pepper, garlic powder, onion powder, and paprika.
  • Use a light hand with the mayonnaise: Too much mayonnaise can make the crab snacks heavy and greasy. Use just enough mayonnaise to bind the ingredients together.
  • Chill the crab snacks before serving: This will help to firm them up and make them more refreshing.

Conclusion:

Cucumber crab snacks are a delicious and easy-to-make appetizer that is perfect for any occasion. They are light, refreshing, and flavorful, and they are sure to be a hit with your guests. So next time you are looking for a quick and easy appetizer, give cucumber crab snacks a try. You won't be disappointed!
