3/4 pound medium shrimp, thawed, deveined and shells on
1 tablespoon prepared horseradish
1 teaspoon lemon juice
Kosher salt
Freshly ground black pepper
1 (15-ounce) can chopped tomatoes, drained

Turn them upside down onto a towel and let them drain while you make the filling.
  • Bring a medium pot of salted water to a boil over medium heat. Add the shrimp and cook until bright pink, about 3 to 4 minutes. Strain and rinse in cold water. Remove the shells and discard. (Reserve 12 shrimp for the Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.)
  • Chop the shrimp into small pieces and put them into a bowl. Add the horseradish, lemon juice, salt and pepper to taste, half the can of tomatoes (reserve the remaining half for the Round 2 Recipe Chicken Tacos with Cucumber Salsa) and 1 tablespoon of parsley. CUCUMBER SHRIMP TEA SANDWICHES

Cucumber Shrimp Tea Sandwiches image

I think tea sandwiches are just so cute and elegant. The recipe for these came from a wonderful fund raiser party for the theater where I volunteer and used to be the box office manager. They were so pretty, elegant, and delicious. The servings will actually depend on how many shrimp you have to work with. From what I observed, people will pick up two at a time and possibly return for more.

Tips:

  • Select fresh, crisp cucumbers: Look for cucumbers that are firm and have a deep green color. Avoid cucumbers that are yellow or have blemishes.
  • Use large shrimp: Large shrimp will be easier to work with and will provide a more substantial bite.
  • Cook the shrimp properly: Shrimp should be cooked until they are opaque and firm. Overcooked shrimp will be tough and rubbery.
  • Use a variety of fillings: Get creative with your fillings! Some popular options include cream cheese, avocado, and salsa. You can also add chopped vegetables, herbs, or spices to taste.
  • Make them ahead of time: Cucumber shrimp snacks can be made ahead of time and stored in the refrigerator for up to 2 days. This makes them a great option for parties or potlucks.

Cucumber shrimp snacks are a delicious and easy-to-make appetizer that is perfect for any occasion. They are light, refreshing, and packed with flavor. With a variety of fillings to choose from, you can easily customize them to your taste. So next time you are looking for a quick and easy snack, give cucumber shrimp snacks a try!
