CUCUMBER SUMMER ROLLS
We used Japanese cucumbers, which are very thin, for this dish. Other types, such as Persian or kirby cucumbers, would also work. Thinly slicing Japanese cucumbers lengthwise produces an unexpected wrap for shrimp, rice vermicelli, and Thai basil leaves.

Tips:
- Choose the right cucumbers: For the best results, use firm, straight cucumbers with no blemishes. English cucumbers are a popular choice because they have fewer seeds and a milder flavor.
- Prepare the cucumbers properly: To make the cucumber wrappers, use a vegetable peeler to create long, thin strips of cucumber. You can also use a mandoline slicer for more consistent results.
- Soak the rice paper wrappers: Before using the rice paper wrappers, soak them in warm water for a few seconds until they become pliable. This will make them easier to roll and prevent them from cracking.
- Use fresh ingredients: The fresher the ingredients, the better your summer rolls will taste. Use crisp vegetables, herbs, and fruits for the best flavor.
- Be careful not to overfill the rolls: When rolling the summer rolls, be careful not to overfill them. This will make them difficult to roll and may cause them to fall apart.
- Serve with a dipping sauce: Cucumber summer rolls are traditionally served with a dipping sauce. There are many different dipping sauce recipes available, so choose one that you like or make your own.
Conclusion:
Cucumber summer rolls are a refreshing and healthy appetizer or light meal. They are easy to make and can be customized to your liking. With a variety of fillings and dipping sauces to choose from, there are endless possibilities for creating delicious and satisfying cucumber summer rolls.
