I'm a vegetarian, so I made this chili without the chicken. It was still delicious! I used extra beans and vegetables to make up for the lack of meat. I served it with avocado and sour cream and it was a hit with my family.

This chili was a bit too spicy for me, but my husband loved it. He said it was the best chili he's ever had. I'll definitely be making it again, but I'll use less cayenne pepper next time.

I'm not usually a fan of chili, but this recipe changed my mind. The sweetness of the corn and the tanginess of the tomatoes really balanced out the spice. I'll definitely be making this again.
