TAHINI-GLAZED CARROTS
A little sweet from date syrup, creamy from tahini and very tangy from plenty of lemon juice, this roasted carrot dish - adapted from Adeena Sussman's cookbook "Sababa" - has charisma to spare. It's also extremely easy to make. While the carrots roast with olive oil and cumin, all you do is whisk together a simple glaze from pantry ingredients. If you don't have the date syrup on hand, maple syrup works just as well, making the dish slightly sweeter but no less compelling.

Steps:
- Heat the oven to 425 degrees. Place carrots on a large rimmed baking sheet and toss with the oil, salt and cumin. Roast carrots for 15 minutes, then turn them and continue roasting until they are golden at the edges and tender, 12 to 15 minutes longer.
- While the carrots are roasting, make the tahini glaze: In a medium bowl, whisk together the oil, tahini, 3 tablespoons lemon juice, silan, cayenne, salt and 1 tablespoon water until smooth. Whisk in 1 to 2 more tablespoons water until you have a thick but pourable sauce. Taste and add more salt or lemon juice, or both, if you like.
- Transfer the carrots to a platter and drizzle with the tahini glaze, tossing the carrots to coat.

ROASTED CARROTS WITH TURMERIC AND CUMIN
These are based on Suzanne Goin's turmeric-spiced root vegetables from her wonderful new book "The A.O.C. Cookbook." I use her technique for roasting the carrots, and use the same spices she uses, but I make the dish with a little less olive oil and butter. Suzanne serves her mix of carrots, turnips, parsnips and rutabagas with Greek yogurt seasoned with makrut lime juice and zest, and mint chutney. They are also delicious on their own.

Steps:
- Preheat the oven to 425 degrees. Cut the carrots in half lengthwise and crosswise. If the carrots are fat at one end, cut the fat half in half again lengthwise, so that the pieces are more or less equal in thickness. Place in a large bowl and toss with the olive oil, salt and pepper, and thyme leaves.
- Heat a heavy baking sheet in the oven for 3 to 4 minutes. Remove from the oven and place the carrots on it in one layer. Roast for 20 to 25 minutes, stirring the carrots every 10 minutes. They should be slightly caramelized and tender.
- While the carrots are in the oven place the cumin and coriander seeds in a mortar and pestle and grind. Add the soft butter, turmeric and Aleppo pepper or chili powder and stir with the pestle until well amalgamated. Transfer to a large pan.
- Remove the carrots from the oven when done and add to the pan with the spice butter and the mint. Toss together, taste and adjust salt and pepper. Serve from the pan or transfer to a platter.

Add remaining 1 tablespoon oil to a large skillet set over medium-high heat. When oil is shimmering, add the carrots and cook , turning often, until cartelized and golden brown, about 4 minutes, Taste and adjust seasoning with salt and pepper. To serve: Transfer carrots to a serving platter and serve with lemon wedges on the side.
Tips:
- Choose the right carrots: For this recipe, it's best to use fresh, firm carrots. Avoid carrots that are limp or have brown spots.
- Peel the carrots properly: Use a vegetable peeler to remove the skin from the carrots. Be sure to peel the carrots evenly so that they cook evenly.
- Cut the carrots into uniform pieces: This will help them cook evenly. If you're using baby carrots, you can leave them whole.
- Don't overcrowd the pan: When roasting the carrots, make sure to spread them out in a single layer on the baking sheet. This will help them roast evenly and get nice and caramelized.
- Roast the carrots until they're tender: The roasting time will vary depending on the size of the carrots. Check them frequently to make sure they don't overcook.
- Make the glaze while the carrots are roasting: This will give the glaze time to come together and develop its flavors.
- Brush the carrots with the glaze: Once the carrots are roasted, brush them with the glaze. This will help them get nice and sticky.
- Serve the carrots immediately: These carrots are best served fresh out of the oven. They can be enjoyed as a side dish or as a snack.
