These muffins were very moist and not too sweet. I made a topping, using 3T of brown sugar and 2T of walnuts.

2 cups whole wheat pastry flour
1 tablespoon baking powder
1 1/4 cups unsweetened applesauce
1/2 cup maple syrup
2 egg whites
1/2 cup sultana raisins or 1/2 cup nuts

  • Combine wet ingredients and stir.
  • Stir wet into dry and blend just until combined and moist.
