1 (2 pound) butternut squash
3 tablespoons unsalted butter
1 onion, diced
2 cloves garlic, minced
2 teaspoons minced fresh ginger root
1 tablespoon curry powder
1 teaspoon salt
4 cups reduced sodium chicken broth
2 firm ripe Bartlett pears, peeled, cored, and cut into 1 inch dice
½ cup half and half

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with parchment paper.

6 cups cubed butternut squash (about 1 1/2 pounds)
3 tablespoons extra virgin olive oil
1 teaspoon butter
1 medium onion, chopped (about 1 1/2 cups)
2 1/2 teaspoons yellow curry powder
1/2 teaspoon ground ginger
Pinch of nutmeg
2 cups peeled, chopped Bartlett pear (about 1 pound, 3 pears)
1 1/2 cups water
1 cup pear nectar
4 cups chicken or vegetable stock (use veg stock for vegetarian option)
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 cup heavy whipping cream
1 small Bartlett pear, cored and thinly sliced

2 medium onions, diced
1 medium butternut squash peeled, seeded and cut into 1-inch pieces
4 pears, peeled and chopped into roughly 1-inch pieces
1-quart low sodium chicken stock, or enough to cover
1 sprig rosemary
Heavy cream
Salt, freshly ground black pepper and granulated sugar

  • In a 4-quart saucepan melt the butter over medium-high heat, and add and sweat the onions. Add squash and pears and sweat those too a bit. Pour in the stock, enough to submerge solids.
