CURRIED EGG SALAD SANDWICHES

Yield Makes 6 servings

Number Of Ingredients 8

12 hard-boiled eggs, peeled, halved
1/4 cup dried currants
1 large green onion, finely chopped
2 tablespoons minced fresh cilantro
1/2 cup plus additional mayonnaise
2 3/4 teaspoons curry powder
1 small cucumber, peeled, cut lengthwise in half, seeded
12 slices home-style or country white bread, toasted

Steps:

  • Scoop egg yolks into large bowl; mash well with fork. Finely chop egg whites; add to yolks. Mix in currants, green onion, and cilantro. Mix 1/2 cup mayonnaise and curry powder in small bowl; stir into egg mixture. Mix in more mayonnaise by tablespoonfuls if salad is dry. Season with salt and pepper. (Can be made 3 hours ahead. Cover; chill.)
  • Thinly slice cucumber crosswise into half-rounds. Place slices on paper towels to drain. Arrange toast on work surface; spread each toast slice with mayonnaise. Divide salad among 6 toast slices; top each with cucumber slices and second toast slice. Cut sandwiches in half; serve.

Tips:

  • Use the best quality eggs you can find. Fresh, organic eggs will make a big difference in the flavor of the salad.
  • Hard-boil your eggs perfectly. Overcooked eggs will be dry and crumbly, while undercooked eggs will be runny. For perfect hard-boiled eggs, place them in a single layer in a saucepan and cover with cold water. Bring the water to a boil over high heat, then reduce heat to medium-low and simmer for 10-12 minutes. Immediately transfer the eggs to an ice bath to stop the cooking process.
  • Use a good quality mayonnaise. A high-fat mayonnaise will make the salad more creamy and flavorful. You can also use Greek yogurt or sour cream as a healthier alternative to mayonnaise.
  • Add your favorite mix-ins. Some popular add-ins for curried egg salad include celery, onion, dill, and grapes. You can also add chopped nuts, crumbled bacon, or shredded cheese.
  • Season the salad to taste. Curry powder, salt, and pepper are the essential seasonings for curried egg salad, but you can also add other spices, such as cumin, coriander, or paprika. Be sure to taste the salad before serving and adjust the seasonings as needed.
  • Serve the salad on your favorite bread. Curried egg salad is traditionally served on white bread, but you can also use whole wheat bread, rye bread, or even croissants.

Conclusion:

Curried egg salad is an easy and delicious sandwich filling that can be enjoyed for lunch, dinner, or a snack. You can customize it to your own taste by adding your favorite mix-ins and seasonings. Curried egg salad is a great way to use up leftover eggs, and it's also a budget-friendly meal. So next time you're looking for a quick and easy meal, give curried egg salad a try!
