3 medium cloves garlic, finely chopped
4 cups low-sodium chicken broth
1 cup water
1 medium russet potato (about 8 ounces), peeled and chopped
1 large Granny Smith apple, peeled and chopped

Tips:

  • Choose the right parsnips: Look for parsnips that are firm and free of blemishes. The smaller the parsnips, the sweeter they will be.
  • Roast the parsnips before adding them to the soup: Roasting the parsnips will bring out their natural sweetness and add a smoky flavor to the soup.
  • Use a variety of apples: Different types of apples will give the soup different flavors. For a sweeter soup, use sweeter apples like Honeycrisp or Fuji. For a more tart soup, use tart apples like Granny Smith or Braeburn.
  • Don't overcook the apples: The apples should be tender but still hold their shape. If you overcook them, they will become mushy.
  • Garnish the soup with fresh herbs: Fresh herbs like parsley, cilantro, or chives will add a pop of color and flavor to the soup.

Conclusion:

Curried parsnip soup with shredded apples is a delicious and easy-to-make soup that is perfect for a cold winter day. The parsnips and apples give the soup a sweet and savory flavor, while the curry adds a touch of warmth. This soup is also a good source of vitamins and minerals, including vitamin C, potassium, and fiber.
