GREEN TOMATO CASSEROLE
I love the tangy taste of fried green tomatoes, but they are, well...fried! And messy to make. I developed this recipe to help assuage my hunger for fried green tomatoes, and yes, it does the job quite well. Without all the grease and batter, the tangy taste of the tomato can really shine through!

GREEN PORK CURRY
I love Thai food, and this is one of the best tasting home cooked curries. You can cut back on the curry paste if it's too spicy.

Steps:
- In a large skillet cook the tomatoes and onions until very soft (if there is a lot of fluid you may want to drain some off before adding the sour cream).

- Let the mixture cool and stir in the sour cream.
- Pour into lightly buttered casserole dish.
- Sprinkle top with crumbs and parmesan.
- Bake in 350F degrees oven until the casserole is bubbly and the topping is well browned (about 30- 45 minutes).
- You can prepare ahead and pop it in the oven 45 minutes before dinner.
Tips:
- Selecting the right pork cut is essential. Pork shoulder or pork chops work well in this recipe due to their optimal fat content and flavor.
- To achieve a flavorful curry, use a variety of spices, including cumin, coriander, turmeric, and garam masala.
- Green tomatoes add a unique tanginess to the dish. If they are unavailable, unripe tomatoes can be used as a substitute.
- Simmering the curry for a longer duration allows the flavors to meld and develop.
- Garnish the finished dish with cilantro or parsley for an extra layer of freshness.
