8 radishes, sliced

3 plum tomatoes, chopped
1 1/2 cups basmati rice

4 cups mixed greens or baby spinach

1 head garlic
1 tablespoon extra-virgin olive oil, plus more for drizzling
Coarse salt and freshly ground pepper
9 slices rye bread
1/4 cup heavy cream
6 ounces smoked trout, flaked into small pieces
18 to 20 cornichons, sliced on the bias into 1-inch pieces

Steps:

  • Preheat oven to 350 degrees. Cut 1/2 inch off the top of garlic to expose the cloves, and transfer bulb to a piece of parchment-lined foil. Drizzle with oil, and sprinkle with salt and pepper. Wrap, and bake until soft, 45 minutes to 1 hour. Unwrap, and let cool.

1 tbsp tandoori curry paste
500g new potatoes , larger ones halved
2 tbsp vegetable oil
1 garlic clove , chopped
1 tsp ground cumin
1 tsp garam masala (or ground coriander)
½ tsp ground turmeric
320g frozen peas
yogurt , coriander leaves and mango chutney, to serve

  • Coat the trout in the curry paste. Put the potatoes in a large pan of cold salted water, bring to the boil and cook for 15-20 mins until tender but still retaining their shape. Drain and leave to steam-dry.
  • Heat the grill. Put the trout fillets on a baking tray lined with foil and cook until tender, about 6-8 mins.
  • Meanwhile, heat the oil in a large frying pan and add the garlic and spices. Cook for a few mins until fragrant, then tip in the potatoes.
