This curry crab is a delicious and flavorful way to prepare blue crabs during crab season!

2 large Maryland blue crabs or similar variety ((or softshell crabs))
2 tablespoons flour
3 tablespoons oil
3 to 5 thin slices fresh ginger
2 cloves garlic ((chopped))
3 shallots ((diced))
1 scallion ((finely chopped))
1 tablespoon curry powder
1 teaspoon turmeric powder
1/2 teaspoon salt
1/4 teaspoon sugar
¼ cup water
1 tablespoon Shaoxing wine

Steps:

  • To prep the crabs, check out our Scallion Ginger Cantonese Crab recipe for very detailed instructions. They should be as fresh as possible! After the crabs are prepared, pat them dry and dredge them with flour. Set aside.
  • In most restaurants, crabs are almost always deep fried first, so they are cooked quickly and the juices get sealed in. But since we're doing this at home, we don't have to get out the deep fryer. The way to do it is to sear the crabs on all sides to get the same effect. Heat the wok over high heat and add 3 tablespoons of oil. Sear the crabs, paying special attention to the open dredged areas in order to seal in the juices. Turn the heat to medium and fry until they've turned red-orange. This process should take about 5 minutes and the crab should be about 80% done. Set them aside.
  • There should be a tablespoon or more oil left in the wok and if not, add more until you have at least 1 ½ tablespoons. Add the ginger. Caramelize for 1-2 minutes on low heat, and then add the garlic, shallots, and the white portions of the scallion. Cook until softened.
  • Turn heat to medium high and add the curry, turmeric, salt, sugar, water and wine, and stir until mixed well. Toss in the crab until coated and cover the wok. Cook for about 1 minute and stir and toss the crab until the liquid is reduced. Garnish with the green portion of the scallions and serve!

QUICK, EASY & TASTY CURRIED CRAB



Quick, Easy & Tasty Curried Crab image

This is so easy - I used Thai Kitchen red curyy paste and flaked articicial crab. Use your own favorites. If you want more sauce just add more chicken stock and curry paste. This recipe is only medium hot but for some this will be HOT. Adjust your curry to your liking - start off with 2 tsp and keep adding.. Serve over rice or noodles. If you make more sauce thicken witn 1 tbsp of corn starch.

1/2 cup chicken stock

3 stalks green onions, finely chopped

1 teaspoon curry powder, or more to taste
1 teaspoon lemon juice

1 tablespoon mayonnaise, or as needed
16 (1/2 inch) slices French baguette

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Mix crabmeat, Swiss cheese, green onions, parsley, curry powder, lemon juice, salt, and pepper together in a small bowl. Add just enough mayonnaise to hold the mixture together.
  • Spread a small amount of the mixture on baguette slices. Place slices on a baking sheet.

1 1/2 pounds jumbo lump crab meat
1 medium onion
3 large garlic cloves
a 1-inch piece fresh gingerroot
2 dried hot red chiles such as cayennes or chiles de árbol
2 tablespoons vegetable oil
1 teaspoon brown or black mustard seeds
1/2 teaspoon black peppercorns
1 teaspoon ground cumin
1 teaspoon ground coriander seeds
1/2 teaspoon turmeric
1/4 cup packed fresh cilantro sprigs
1 1/2 cupsLaxmi's fresh coconut milk or canned unsweetened coconut milk
1 1/2 teaspoons coarse salt, or to taste
Accompaniment: cooked white or brown basmati rice
Garnish: sliced scallion greens

Steps:

  • Pick over crab meat to remove any bits of shell and cartilage. Chop onion and mince garlic. Peel gingerroot and mince. Wearing protective gloves, break chiles into 1-inch pieces and reserve, along with any seeds.
  • In a 4- to 5-quart kettle heat oil over moderately high heat until hot but not smoking and cook mustard seeds until they begin to pop. Stir in onion, garlic, gingerroot, reserved chiles with seeds, and peppercorns and cook, stirring, until chiles are just browned, 3 to 4 minutes. Stir in other spices until combined well. Add crab and cook mixture, gently stirring occasionally (avoid breaking up crab), about 4 minutes.
  • While crab mixture is cooking, chop cilantro. Stir cilantro into crab mixture with coconut milk and salt and simmer until slightly thickened, 6 to 8 minutes.
  • Spoon curry over rice and garnish with scallion greens.

The body is cooked whole along with the pincers and legs. The legs usually don't have much meat but add flavor to the dish. 1 whole star anise pod, crushed

Steps:

  • In a small sauce pot, brown the butter over medium heat, swirling the pot, until the butter is caramel-colored and has a nutty fragrance, about 5 minutes. Transfer to a bowl, scraping up all the milk solids from the bottom and sides of the pot while the butter is still hot, and let cool to room temperature.
  • Place the egg and egg yolk, 2 tablespoons lemon juice, a healthy pinch of salt and 1 tablespoon cold water in the bowl of a food processor. With the processor running, slowly drizzle in the grapeseed oil. Once all the oil has been added, the mayonnaise should be loose yet emulsified. While the processor is still running, slowly drizzle in the brown butter and any toasted milk solids. Season to taste with salt and set aside.

1/2 cup finely chopped green pepper
mayonnaise
