My Grandmother used to make egg custard pies for me `cause they were my fav, and she loved them too.

4 large eggs
2/3 c sugar
1/2 tsp salt
2 1/2 c whole milk* (note below)
1 tsp pure vanilla
1/2 tsp nutmeg

Steps:

  • 1. Wisk all ingredients together, pour into a 9 1/2" deep dish pie plate lined with an unbaked pie pastry crust. Bake at 340 dF for approximately 1-hr 10-min or until set in the middle. Cover the pastry crust edges with a pie shield or foil after being in oven about 30 minutes; so it does not get tooo brown.
  • 2. *NOTE: I wanted to use sour milk instead so... I made 'sour milk' by adding 2 Tablespoons of lemon juice (can also use distilled white vinegar) in a 4-cup measuring vessel and adding the whole milk. Just gave it a stir and let set about 15 minutes to thicken and looked like it was begining to curdle.

1 cup flour
1/2 tsp salt
1/4 cup olive oil (EVOO or oil of choice)
1/4 cup COLD water (or more depending on desired consistency)
CUSTARD
4 eggs
1 can carnation milk or 1 1/2 cups heavy cream
1 TBSP flour
1/4 tsp pepper
1/2 tsp salt
1/4 tsp nutmeg
1 1/2 cups shredded cheese (swiss, cheddar, mozzarella - depending on fillings)
FILLINGS
Examples - broccoli, spinach, asparagus etc. etc. etc.

Steps:

  • 1. Preheat oven to 375 degrees 2. In a bowl mix together the flour and salt 3. In a separate bowl using a fork or whisk beat the oil and water together to thicken. 4. Pout the liquid mixture int the flour and mix well. 5. Press into a 9" quiche or pie pan 6. With a whisk mix all custard ingredients together. 7. Place any fillings you wish on the pressed pie crust and pour the custard mixture over the crust and fillings. 8. Bake at 375 until done - approximately 35 minutes - the custard should be not fully set but a knife inserted into the custard should come out clean. Let sit about 10 minutes before serving so the custard sets.
