PERFECT SCRAMBLED EGGS

Steps:
- Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
- TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
- Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
- Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
- Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

Steps:
- Crack the eggs into a mixing bowl. Whisk the eggs until the yolks and the whites are cohesive and light yellow.
- Add the butter to a nonstick pan and heat over medium-low heat. When the butter is melted, add the eggs and 1/2 teaspoon salt. Continue moving the eggs with a rubber spatula; after a few minutes, some curds will start forming. Keep stirring and scraping the pan until the eggs come together, are creamy and look almost like a custard. This process can take between 15 to 20 minutes. Remove the pan from heat. Season with salt.
- To serve, spoon the eggs onto the toast. Top with freshly ground black pepper.

MARTHA'S SCRAMBLED EGGS
This is how Martha makes scrambled eggs so you know it's going to be good. First, preparation is everything. Before you even start to scramble, toast and butter the English muffins and pop them in a warm oven on the plates you'll serve breakfast on. The eggs are cooked in clarified butter, they turn out soft, moist, and slide easily out of the pan.

Steps:
- Melt the butter in a nonstick skillet over medium heat. Break the eggs into the pan when it is warm but not yet hot. Sprinkle the eggs lightly with salt.
- Let the pan heat up, and don't move the eggs until the egg whites begin to set. Using a heat-resistant spatula, move the whites around the pan to help them cook through, while keeping the yolk unbroken, for about 30 seconds. When the whites fluff up and are almost completely set, remove from the heat and fold the yolks into the whites. The residual heat should cook the whites through and leave the yolks soft. This is kind of like scrambling an over easy egg.
- Sprinkle with herbs, if desired.

Tips:
- Use fresh eggs. Fresh eggs will produce fluffier, tastier scrambled eggs. If you're not sure if your eggs are fresh, crack one open into a bowl. If the yolk is round and stands up tall, the egg is fresh. If the yolk is flat and runny, the egg is old and should not be used.
- Beat the eggs well. Beating the eggs well will help them cook evenly and prevent them from becoming tough. You can beat the eggs with a fork, whisk, or electric mixer.
- Cook the eggs over medium heat. Cooking the eggs over medium heat will help them cook evenly without burning. If you cook the eggs over high heat, they will brown too quickly and become tough.
- Stir the eggs constantly. Stirring the eggs constantly will help them cook evenly and prevent them from sticking to the pan. You can use a spatula or a whisk to stir the eggs. Don't over-stir the eggs, or they will become tough.
- Season the eggs to taste. You can season the eggs with salt, pepper, herbs, or spices to taste. Some popular seasonings include salt, pepper, garlic powder, onion powder, paprika, and chili powder.
- Serve the eggs immediately. Scrambled eggs are best served immediately after they are cooked. If you need to hold the eggs for a short period of time, you can keep them warm in a covered dish in a warm oven. Don't let the eggs sit out at room temperature for more than two hours, or they will become unsafe to eat.
Conclusion:
Scrambled eggs are a quick and easy breakfast, lunch, or dinner option. They can be made with just a few simple ingredients, and they can be customized to your liking. With a little practice, you can make perfect scrambled eggs every time.
Here are a few additional tips for making scrambled eggs:
- If you want creamy scrambled eggs, add a tablespoon of milk or cream to the eggs before cooking.
- If you want fluffy scrambled eggs, beat the eggs whites and yolks separately until stiff peaks form. Then, fold the egg whites into the egg yolks and cook as usual.
- You can add a variety of ingredients to scrambled eggs, such as cheese, vegetables, meat, or fish. Get creative and experiment with different flavors.
