DATE NUT LOG

Date Nut Log image

Another one of Mom's recipes. This is similar to some fruit cake recipes that I have seen on JAP but uses only the marshmallows, dates, and nuts -- and is smaller in size so it is not overpowering. You can add other things if you like -- such as raisins, or candied fruit. You may need to add a little more graham crackers and...

Number Of Ingredients 6

2 c dates, cut in very small pieces
1 c walnuts, chopped small
1/2 pkg miniature marshmallows cut in half (2 cups)
1/2 pt cream
2 c graham cracker crumbs
additional graham cracker for coating when done

Steps:

  • 1. Mix dates, marshmallows, nuts and cream.
  • 2. Add 2 cups graham cracker crumbs. Work well to solid form, (like meat loaf). Add more crumbs if too sticky
  • 3. Separate into to 2 portions shaped like liverworst (longish tube or log), place on waxed paper (or plastic wrap -- not aluminum foil) onto which more graham crackers have been sprinkled.
  • 4. Roll to cover in crumbs and then wrap and refrigerate for a couple of hours. When they have "set up" they can then be removed and sliced for serving.
  • 5. Will store, as rolls, in fridge for quite a while so they can be made ahead, then removed when needed. Slice just before serving.
  • 6. NOTE 1: It has occurred to me that rather than chopping all these tiny things before hand -- the dryish ingredients could be placed in a food processor which would chop and mangle things very small. Perhaps the cream would assist the chopping or maybe should be added after they are chopped up? Then add the graham cracker crumbs, perhaps by hand, to form and shape.
  • 7. NOTE 2: These are actually quite versatile little things. You can add other things, like cherries, or peanuts. If you have the patience you could even cut up caramels for inclusion, too. You could also add spices like cinnamon, nutmeg, or cloves if you like.
  • 8. And you can roll the logs in coconut, or crushed nuts, instead of more graham crackers, too. After you slice them, they could also be dipped in melted chocolate, so they are all ready to serve with no rush at serving time.
  • 9. This is an opportunity to be creative and make something really special for the people in your life. Enjoy!

Tips:

  • Use fresh, soft dates: Softer dates are easier to work with and will blend more smoothly, resulting in a creamier filling.
  • Remove the date pits: Before using the dates, be sure to remove the pits. You can do this by slicing the dates lengthwise and popping out the pits, or by using a paring knife to carefully cut around the pits.
  • Toast the nuts: Toasting the nuts will enhance their flavor and make them more fragrant. You can toast the nuts in a preheated oven at 350°F (175°C) for 5-10 minutes, or in a skillet over medium heat for 3-5 minutes, stirring constantly.
  • Use a food processor or blender to make the filling: This will help to create a smooth and creamy filling. If you don't have a food processor or blender, you can mash the dates and nuts by hand, but it will take a bit more time and effort.
  • Chill the filling before using: This will help the filling to set and make it easier to work with. You can chill the filling for at least 30 minutes, or up to overnight.
  • Use a variety of toppings: You can top the date nut log with a variety of different toppings, such as chocolate chips, chopped nuts, or shredded coconut. You can also drizzle the log with chocolate sauce or caramel sauce.

Conclusion:

Date nut logs are a delicious and easy-to-make treat that are perfect for any occasion. They're made with a combination of dates, nuts, and spices, and they can be rolled in a variety of toppings. Date nut logs can be stored in the refrigerator for up to a week, or they can be frozen for up to 3 months.
