Time 1h10m

Number Of Ingredients 7

2 stick butter
1 c sugar
1 8 oz package chopped dates (make sure they are not sugar coated)
2 c rice krispies
1 c pecans (chopped
1 tsp vanilla extract
1 box confectioners' sugar

Steps:

  • 1. Combine first three ingredients and cook for approximately 10 minutes until it comes to a boil. Take off the eye and cool slightly.

  • 3. Add confectioner sugar to a large plastic bag or bowl. Dump balls into large plastic bag or bowl. Toss until covered. Store in Christmas tins.

Tips:

  • Use a food processor to finely chop the dates. This will help them blend better with the other ingredients and create a smoother texture.
  • If you don't have a food processor, you can chop the dates by hand. Just be sure to chop them very finely.
  • Add a little bit of lemon juice to the date mixture. This will help brighten the flavor and prevent the dates from tasting too sweet.
  • If you want a more intense chocolate flavor, use dark chocolate chips instead of semi-sweet chocolate chips.
  • If you don't have chocolate chips, you can use chopped chocolate bars or even chocolate syrup.
  • Be sure to chill the date mixture before rolling it into balls. This will help the balls hold their shape better.
  • If you want a more festive look, roll the date balls in sprinkles or chopped nuts before serving.
