AEBLESKIVER (DANISH PANCAKES)

Aebleskiver (Danish Pancakes) image

As a young girl, I constantly craved Saturdays and Sundays when my mother would prepare these small delicious pancakes. Now as a college student, I still look forward to Christmas time when our family is together and my mother and I prepare an overwhelming amount to feed family members! Definitely add in any kind of jam, peanut butter, honey, Nutella®, chocolate chips, fruit (diced apples, blueberries, etc.); the possibilities are endless and so delicious!

Time 10m

Yield 7

Number Of Ingredients 11

1 cup whole wheat flour
2 tablespoons white sugar
2 ½ teaspoons baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 dash ground nutmeg
1 dash ground cloves
1 egg, lightly beaten
¾ cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract

Steps:

  • Stir the flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves together in a large bowl; mix in the egg, milk, butter, and vanilla until just combined.
  • Heat an aebleskiver pan over medium heat; prepare with cooking spray.
  • Pour the batter into each cup to about 2/3 full. Allow the batter to cook in the bottom of the cup 3 to 4 minutes until golden brown. Don't forget which cup you placed the batter in first, it's all about rotation! Use a long skewer or knitting needle to lift one edge and give it a 1/4 turn. The uncooked batter will spill over into the cup, and cook. Continue lifting and turning the edges until the batter is fully cooked into a golden brown ball. Drain on paper towels.

DEELISH GERMAN PANCAKES

This was my favorite breakfast when I was young...wait... it still is! These are wonderful and very easy, you can fill and top with anything. We enjoy them with my recipe#402380 or syrup! Deelish!

Provided by Amber C.

Categories     Breakfast

Time 15m

Yield 2-3 pancakes a person, 3-4 serving(s)

Number Of Ingredients 10

1 cup flour, sifted
1/4 cup powdered sugar
1/2 teaspoon salt
1 cup milk
2 eggs
butter
jam
syrup
fruit
powdered sugar

Steps:

  • In a mixing bowl add sifted flour, powdered sugar and salt; slightly mix.
  • With electric mixer beat in milk and eggs until it is no longer lumpy; batter will be thin, do NOT over mix
  • Pour about 1/4 c batter into a greased pan and move pan in a circular motion to get batter to spread and form a large circle.
  • Cook on med-low heat until bubbles start forming on top and edges start lifting from pan.
  • Flip and cook about one more minute or until done, turn heat down if they cook too fast or start forming a crispy layer on bottom.
  • Add syrup or filling/topping of choice and roll from one end to the other, top with more syrup or topping of your choice.
  • Sprinkle lightly with powdered sugar and serve!

Tips:

  • Use a large skillet. This will ensure that the pancakes have enough room to spread out and cook evenly.
  • Heat the skillet over medium heat. If the skillet is too hot, the pancakes will brown too quickly and not cook through in the center.
  • Use a little bit of butter or oil to grease the skillet. This will prevent the pancakes from sticking.
  • Pour the batter into the skillet in a thin, even layer. This will help the pancakes cook evenly.
  • Don't flip the pancakes too soon. Wait until the edges are golden brown and the tops are bubbly before flipping.
  • Cook the pancakes for a few minutes on each side, or until they are golden brown and cooked through.
  • Serve the pancakes immediately with your favorite toppings.

Conclusion:

German pancakes are a delicious and easy-to-make breakfast or brunch dish. They are perfect for a lazy weekend morning or a special occasion. With a few simple ingredients and a little bit of time, you can enjoy these fluffy and flavorful pancakes right at home. So next time you're looking for a new breakfast recipe, give German pancakes a try. You won't be disappointed!
