12 hard-boiled eggs
2 Tbsp dill pickle relish
2 Tbsp Dijon mustard
1/4 c mayonnaise
1 tsp flat leaf parsley, chopped
1 tsp lemon juice
1 pinch salt and pepper
7 oz chipotle peppers in Adobo sauce, seeded and blended (reserve 2-3 Tbsp for ranch dipping sauce)
12 bacon slices
BATTER
1/2 c cornmeal
1/2 c flour
1 Tbsp corn starch
2 1/2 Tbsp baking powder
1/2 c water
12 oz beer

Steps:

  • 1. Cut boiled eggs length wise in circular motion without cutting boiled yolks then remove.
  • 2. Mix boiled yolks with all ingredients (remove 2 Tbsp of blended chipotle peppers in Adobo sauce for the ranch dressing) until a smooth consistency.
  • 3. Fill egg whites with yolk mixture.
  • 4. Wrap the deviled egg with sliced bacon and set aside.
  • 5. For Batter: Mix dry ingredients together.
  • 6. Add water and then beer mixing well so that there are no lumps and smooth consistency.
  • 7. Heat 1 quart of canola oil to 350 degrees. Lightly dredge deviled egg in flour shaking off excess flour.
  • 8. Dip egg in the batter mix.
  • 9. Then gently place in the heated oil. Repeat until all eggs are coated and cooked. You'll want to occasionally give the batter a stir during the batter and frying process.

  • 11. For chipotle ranch, add the 2 Tbsp of reserved blended chipotles to 2 cups of ranch dressings.

  • 13. Side note: You can add as much or little of the chipotle as you like. My family tends to like them spicy so I use almost all of the can.

FILLING:
15 eggs, hard boiled, cut in half, yolks separated from whites
cooking oil to deep fry
flour, as needed
panko bread crumbs, as needed
paprika to garnish
1/2 cup mayonnaise
1 teaspoon yellow mustard
1/2 teaspoon vinegar
1/2 teaspoon sugar
1 pinch salt
1 pinch garlic salt
black pepper, to taste

Steps:

  • Boil 12 eggs until hard boiled. While eggs are boiling, beat the other 3 eggs. Then put the flour, beaten eggs and bread crumbs into 3 separate bowls. Set aside. Let the boiled eggs cool, and then peel, rinse and dry, and slice the eggs in half lengthwise. Separate the cooked egg yolks and put them in a medium size bowl to make the deviled egg filling. Add the mayonnaise, mustard, vinegar, sugar, salt, garlic salt and black pepper to taste. Mix with an electric mixer, until filling is smooth. Set aside. Coat the cooked egg whites halves with flour, then dip in the beaten egg, and then coat in Panko crumbs. Set them aside on a plate or piece of wax paper until ready to cook. Heat oil in the bottom of a 2 quart saucepan until medium hot. Carefully place 3 or 4 of the coated egg whites into the oil, and fry for 1 to 2 minutes on each side, or until golden brown. Remove from oil and drain on paper towels. When all of the egg whites are fried, fill with the prepared deviled egg filling. Garnish with a sprinkling of paprika. Serve immediately.

Tips:

  • Use large eggs for a better yolk-to-white ratio.
  • Make sure the eggs are hard-boiled and fully cooled before peeling and halving them.
  • Use a sharp knife to cut the eggs in half to prevent them from crumbling.
  • Remove the yolks from the whites carefully to avoid breaking them.
  • Use a food processor or blender to make the yolk mixture smooth and creamy.
  • Season the yolk mixture to your taste with mayonnaise, mustard, vinegar, salt, and pepper.
  • Pipe the yolk mixture into the egg white halves using a pastry bag or a spoon.
  • Coat the eggs in flour, then egg wash, then breadcrumbs twice for a crispy coating.
  • Fry the eggs in hot oil until they are golden brown and crispy.
  • Serve the eggs hot with your favorite dipping sauce.

Conclusion:

Deep-fried deviled eggs are a delicious and unique appetizer that is sure to impress your guests. With a crispy outer shell and a creamy, flavorful filling, these eggs are a perfect combination of textures and flavors. Whether you are serving them at a party or as a special treat, deep-fried deviled eggs are sure to be a hit.
