Time 40m

Yield 6 serving(s)

Number Of Ingredients 11

2 tablespoons canola oil
1 large onion, chopped
3 garlic cloves, minced
2 cups long-grain rice
10 ounces Rotel tomatoes & chilies
14 1/2 ounces whole tomatoes
1 teaspoon ground cumin (or more to taste)
1/4 teaspoon cayenne pepper
1 teaspoon kosher salt
2 -3 cups low sodium chicken broth
fresh cilantro, chopped for garnish

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Add the onion and garlic and cook for 3 to 4 minutes.
  • Reduce the heat to low for 3 minutes, stirring constantly to make sure the rice doesn't burn.
  • Add the Rotel, the whole tomatoes, cumin, cayenne, and salt.
  • Stir to combine and cook for 2 minutes.
  • Add 2 cups of the broth and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 10 to 15 minutes more, or until the rice is done.
  • Add more liquid as needed. The rice shouldn't be sticky.
  • Just before serving, sprinkle lots of freshly chopped cilantro over the top.

Tips:

  • Using high-quality ingredients is key to making the best Mexican rice. Choose long-grain white rice, such as basmati or jasmine, for a fluffy texture. Use fresh, flavorful vegetables, such as tomatoes, onions, and peppers. And don't forget the spices! Cumin, chili powder, and garlic powder are all essential for authentic Mexican rice.
  • Rinsing the rice before cooking helps to remove the starch and prevents it from becoming sticky. Be sure to drain the rice thoroughly before adding it to the pot.
  • Toasting the rice in a little bit of oil before adding the liquid helps to bring out its flavor and gives it a slightly nutty taste.
  • Use a heavy-bottomed pot or Dutch oven to cook the rice. This will help to distribute the heat evenly and prevent the rice from burning.
  • Bring the liquid to a boil before adding the rice. This will help to prevent the rice from becoming mushy.
  • Once the rice is cooking, reduce the heat to low and simmer until all of the liquid has been absorbed. This will take about 18-20 minutes.
  • Do not stir the rice while it is cooking. This will break up the grains and make the rice gummy.
  • Once the rice is cooked, fluff it with a fork before serving. This will help to separate the grains and make the rice light and fluffy.

Conclusion:

Mexican rice is a delicious and versatile dish that can be served as a side dish or as a main course. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the best Mexican rice that will impress your family and friends.
