Time 1h15m

Yield 10

Number Of Ingredients 12

1 (16 ounce) package elbow macaroni
6 tablespoons butter
½ cup all-purpose flour
5 ½ cups milk, divided
2 ½ cups shredded smoked Gouda cheese
1 ½ cups shredded Cheddar cheese
1 ½ cups shredded Swiss cheese
1 cup grated Parmesan cheese
½ cup grated Parmesan cheese
½ cup dry bread crumbs
1 teaspoon ground cayenne pepper
olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a pot with lightly-salted water and bring to a boil. Stir the macaroni into the water and return to a boil. Cook and occasionally stir until the pasta has cooked through, but is still firm to the bite, about 8 minutes; drain.
  • Melt the butter in a large pot over medium heat. Add the flour to the melted butter and whisk continually for 1 to 2 minutes to make a roux. Whisk 2 cups of the milk into the roux until smooth and then add the remaining milk. Raise the heat to medium-high and continue cooking and stirring until thickened, but not boiling. Stir the Gouda, Cheddar, Swiss, and 1 cup Parmesan cheese into the mixture; once the cheeses have melted completely, fold the drained macaroni into the mixture to coat. Pour the macaroni mixture into a 9x13-inch baking dish.
  • Stir 1/2 cup Parmesan cheese, bread crumbs, and cayenne pepper together in a small bowl; sprinkle over the macaroni. Drizzle the olive oil over the bread crumbs.
  • Bake in the preheated oven until golden and bubbly, about 30 minutes. Allow to rest 10 minutes before cutting.

I found this smoked mac and cheese recipe years ago in a magazine, and kept adding and taking away ingredients until I found the perfect combination. You can bake it in the oven, but grilling or smoking the dish is the real way to go. -Stacey Dull, Gettysburg, Ohio

Time 20m

Yield 8 servings

Number Of Ingredients 11

1 pound macaroni
Salt
1 cup heavy cream
2 tablespoons butter
1 clove garlic, peeled
1/2 cup grated fontina
1/2 cup crumbled goat cheese (chevre)
1/2 cup grated Parmesan
1/2 cup grated Romano
Freshly ground black pepper
Minced fresh parsley, as needed

Steps:

Tips:

  • Choose the right type of pasta. Macaroni is the traditional choice for mac and cheese, but you can also use other short pasta shapes, such as penne, shells, or elbows.
  • Use a good quality cheese. The type of cheese you use will greatly affect the flavor of your mac and cheese. Use a sharp cheddar cheese for a bold flavor, or a mild cheddar cheese for a more subtle flavor.
  • Cook the pasta al dente. You want the pasta to be cooked through, but still have a little bit of a bite to it. This will help it hold its shape in the mac and cheese.
  • Make a roux. A roux is a mixture of butter and flour that is used to thicken the cheese sauce. Be sure to cook the roux over low heat until it is smooth and bubbly.
  • Add the cheese gradually. Slowly whisk the cheese into the roux until it is completely melted and smooth. Be careful not to overcook the cheese, or it will become rubbery.
  • Season the mac and cheese to taste. Add salt, pepper, and other spices to taste. You can also add other ingredients, such as cooked bacon, jalapeños, or breadcrumbs.
  • Bake the mac and cheese until it is bubbly and golden brown. This will help to brown the top of the mac and cheese and give it a crispy texture.

Conclusion:

Smoked mac and cheese is a delicious and versatile dish that can be enjoyed by people of all ages. It is perfect for a casual meal with friends or family, or for a special occasion. With a few simple tips, you can make a smoked mac and cheese that is sure to impress your guests.
