2 slices bread
2 slices provolone cheese, or more as needed
¼ avocado - peeled, pitted, and thinly sliced
½ tomato, sliced
1 ½ teaspoons balsamic vinegar

Steps:

  • Lay 1 slice bread on a plate. Place provolone cheese on bread and top with avocado and tomato slices, respectively. Drizzle balsamic vinegar over tomato and top with remaining slice of bread.

I combined a number of my favorite things to come up with this tasty sandwich. This is a great use for leftover chicken. Makes a great summer supper, or hearty lunch.

1 1/2 cups cooked chicken, diced
1/2 avocado, diced
2 tablespoons onions, minced
2 tablespoons pimentos, minced
1 tablespoon fresh parsley, minced
2 tablespoons celery, minced (optional)
3 tablespoons mayonnaise (more if desired)
1/2 teaspoon lemon juice (bottled is fine here, but fresh is even nicer)
2 -5 drops hot pepper sauce
salt
pepper
2 sandwich rolls, such as french rolls, sub rolls, ciabatta
2 leaves lettuce

Steps:

  • Combine all ingredients except rolls and lettuce in a medium bowl.
  • Slice rolls in half, and toast if desired. Lay lettuce leaves on bottom halves of rolls, and divide chicken salad between them. Place roll tops on sandwich.

3 cups cooked chicken, cubed (or use two 12.5 ounce cans Swanson's White Premium Chunk Chicken Breast, well drained)
1 ripe firm tomatoes, chopped
1 teaspoon fresh lovage, leaf finely chopped (or fresh celery leaf)
1/2 teaspoon snipped fresh marjoram
1/8 teaspoon onion powder, to taste
salt and pepper (optional)
3/4 teaspoon fresh lemon juice
1/3 cup good quality mayonnaise
2 firm ripe avocados, cubed
8 slices fresh white bread, lightly toasted
lettuce (optional)
sliced cheese (optional)

Steps:

  • In a medium bowl, stir together the drained chicken chunks, chopped tomato, lovage or celery leaf, snipped marjoram, onion powder, lemon juice, and mayonnaise.

  • I served mine on small ciabatta buns, but you can use any buns or rolls you like. I also ate some the next day on whole wheat bread and I added a little salsa - it was delicious!
