1/2 cup butter or 1/2 cup margarine
2/3 cup granulated sugar
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon allspice
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup applesauce

Steps:

  • Preheat oven 350 degrees F. Line mini muffin pan with paper liners (or grease with cooking spray).
  • In a large bowl, cream together the butter or margarine and sugar.
  • Add eggs and beat until smooth.
  • Blend in cinnamon, allspice, baking powder and baking soda.
  • Alternately add ina half a cup of applesauce, one cup of flour, remaining applesauce, and remaining flour.

2 cups all-purpose flour
1 cup granola without raisins
2/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large eggs, room temperature
2/3 cup unsweetened apple juice
1/4 cup canola oil
1-1/2 cups grated peeled apples

Steps:

  • In a large bowl, combine the first 7 ingredients. In another bowl, whisk the eggs, apple juice and oil. Stir into dry ingredients just until moistened. Fold in apples., Fill 12 greased or paper-lined muffin cups three-fourths full. Bake at 400° for 18-20 minutes or until a toothpick inserted in the center comes out clean. 1 medium unpeeled apple, finely chopped (1 cup)
